CHICKEN REZALA
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Chicken Marination
900 gms Chicken (drumstick) चिकन
Salt to taste, नमक स्वादअनुसार
1 ½ tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 cup Cud, beaten, दही
½ tsp White Pepper Powder, सफेद मिर्च का पाउडर
For White Onion paste
3 medium White onion, cut into half, सफेद प्याज
Salt to taste, नमक स्वादअनुसार
2 tsp Oil, तेल
For Cashew & Poppy Seeds Paste
½ tbsp Poppy seeds, soaked in water, खसखस
9-10 Cashewnut, soaked in water, काजू
For Chicken Rezala
1 tbsp Oil, तेल
1 tbsp Ghee, घी
2-3 Cloves, लौंग
1 Bay leaf, तेजपत्ता
½ inch Cinnamon stick, दालचीनी
2-3 Dry red chillies, सूखी लाल मिर्च
½ tbsp Butter, cubed, मक्खन
Prepared Onion Paste, तैयार किया हुआ प्याज का पेस्ट
⅓ cup Curd, beaten, दही
Marinated Chicken, मैरिनेटेड चिकन
6-7 Saffron strands, केसर
½ tsp Kewra water, केवड़ा पानी
1 tbsp Cashew & Poppy Seeds Paste, तैयार किया हुआ काजू और खसखस ​​पेस्ट
A pinch of masala, तैयार किया हुआ मसाला
For Masala
15-18 Black peppercorns, काली मिर्च के दाने
5-6 Green cardamom, हरी इलायची
2 Mace, जावित्री
1 tsp Coriander seeds, धनिया के बीज
Salt to taste, नमक स्वादअनुसार
For Garnish
A pinch of masala, तैयार किया हुआ मसाला
Coriander sprig, धनिया पत्ता
Process
For Chicken Marination
In a bowl, add chicken, salt to taste, ginger garlic paste, curd, white pepper powder and marinate it well.
Rest it for 15-20 minutes and keep it aside for further use.
For White Onion paste
In a bowl, add white onions, salt to taste and oil.
Transfer it to a grinder jar and make a smooth paste.
Keep it aside for further use.
For Cashew & Poppy Seeds Paste
In a bowl, add poppy seeds and cashews.
Transfer it to a grinder jar and make a smooth paste.
Keep it aside for further use.
For Chicken Rezala
In a handi or kadai, add oil, ghee, once it's hot, add cloves, bay leaf, cinnamon stick, dry red chillies and let it splutter.
Add butter, prepared onion paste and saute for a minute.
Add curd, marinated chicken and mix it well.
Cover it with the lid and cook it for a while or until the chicken is tender.
Add saffron strands, kewra water, prepared cashew & poppy seeds paste and mix it well.
Let it simmer for a while and finish it with the prepared masala.
Transfer it to a serving dish and sprinkle it with some prepared masala.
Garnish it with coriander sprig and serve hot with lachha paratha.
For Masala
In a bowl, add black peppercorns, green cardamom, mace, coriander seeds and salt to taste.
Transfer it to a grinder jar and make a fine powder.
Keep it aside for further use.

My timing was perfect for this recipe.. I got off work an hour ago, & its currently 1am here in Canada BC.. I just marinated the chicken and will leave it overnight.. I will be making this recipe tomorrow for lunch.. Thank you again Chef Ranveer Sir for this beautiful recipe 🙏 Much Love❤

Masterchef me dekh te he ki Garima ji hamesha Aruna ji ki plating ka phata phat tareef karte he … improvisation bolna bhi ho to bahut ache se bolte he … wahi Suvarna ji ka plating phata phat nakaar dete he aur positive uplifting comments nahi hote sida sida negative bolke bej dete he . This is one dish really close to my heart, I was 7 years old when my father first introduced me to Chicken Rezala and tandoori Roti at a restaurant in Lalbazar, Shahi Darbar (now closed). This one dish is my all time favourite and truly emotional for me. Thank you for bringing those memories back. Honestly there really quite few places in Kolkata that gets this dish right.

Hey Ranveer! Your recipe reminded me of my mother. Emotional! She was an excellent cook and taught me this. I add pinch of Javitri too. I also add cashew, posto and chaar magazh. Amazing dish. Many restaurants near my home in Kolkata also add makhane at the very end. Also the consistency of the gravy is much thinner. It's supposed to be a thin light but flavoured soup-gravy which you dip and eat with roomali rooti.

It is my son's favourite dish. Once in a week I have to cook. I generally add black pepper whole as a phoron and fry whole red chilli and take them out and keep aside for garnish. We prefer to eat rezala with tandoori roti. I often eat only gravy of rezala with biriyani. It's my personal choice. Thank you chef sharing this recipe. We are bengali...khub bhalo laglo.🙏

I tried this dish today..to take care of the raw (kachha) taste of posto, i light roasted posto, dessicated coconut and cashews before wet grinding them..this gives a subtle nutty taste which blends well with the kewra..the final result was awesome 👌👌

Meri Nani ek baar mein chicken,dahi, onions, salt, black pepper dal ke marinate krke phir bohot Sara oil garam krke phir garam masala dal ke ek baar mein marinated chicken dal ti thi .. phir beech beech mein Thora stir krti thi... Bohot tasty hota tha khane mein ...

Aaj rezala banaya Sunday lunch me, haqiqat me banane me bahut maza aya and jab khaya to iske taste ne Kolkata ka khaya huya rezala ka taste ko maat de di. Super hit. Pasand to itna aaya ki hum logo ne lagan hi saaf kar di. Ab sunday dinner me kya banega iska tension ho gaya. Thanks Ranveer for all the help.

Your rezala recipe reminded me of my childhood. My mom made beautiful rezala witn some twists. She used to cut potato in roundells, fry them and add them.on top after the rezala was made. Also she used to give an extra tadka of black pepper and cardamom at the end!!

Rezala is a curry which I could never master. I have tried this preparation from the hands of my aunt, some elder sisters as well but I could never copy them. Thanks for this recipe. It's going to be there on my dinner table this weekend.

We'll, in Dhaka, Bangladesh, rezala would be close to the korma you cooked, red in colour and rich, birista, laal mirch paste and all, and this recipe would be the chicken korma, white in colour and lighter. My dadi would do without most of the aromatics, but put in some pandan leaves (polao patta) and the smell would be incredible. The whole muhall would know there is polao and korma in the menu. Both my mother and my dadi would finish it with some milk at the end. With saada polao, this chicken korma would be heaven.

I don't cook Non Vegetarian food... (Though I eat... As my husband cooks it for me 😜...) I just saw this whole recipe, just to demand for a new variety of chicken( of course from my husband) , and to hear the interesting story behind the word "Rezala".. Very informative and superb chef I hv ever seen!!! Kudos @ranveerbrar !!

Rezala is one of my favorite. I being a Bengali and make it often, I try to keep gravy much lighter much like soupy consistency and have it with phulka roti 😊 though personally would have enjoyed with roomali roti. I usually put whole black pepper as initial tempering and whole red chilli in ghee as garnish. Thank u for sharing this recipe.🙏🏻😊
