I make very cheap pesto from sunflower seeds (much cheaper than any nuts, kale leaves + oil + salt + dried oregano + something sour - usually umeobosh vinegar, black pepper). We love it ! I use often green leaves that people discard in supermarket when buying vegetable (kohlrabi leaves, carrot green leaves, cauliflower young leaves, broccoli leaves). If its bitter, I add few dried tomatoes to improve taste. We love it!

The microwave is amazing for this. I throw a potato in on the potato setting and then load up toppings like pico, guac, beans, greens, salsa, tofu, etc. And you have a loaded baked potato in less than 5 minutes. ❤

You really opened my eyes! I have been frustrated for months...buying ebooks cookbooks and then planning extravagant meal plans and then when it's time for me to cook I get overwhelmed and just eat something I shouldn't. For 3 weeks now I have been off my plan and I suffer from a food addiction. Your video really helped me see what I was doing and what to do about it. I have lost around 165lbs. by eating a WFPB DIET without oil. Thank you for getting me back on track.

As I viewed this video, I prepped a big bowl of salad (kale, cabbage with carrots, some spring mix, some fresh parsley, and spring onions. In a separate container, I mixed tahini, maple syrup, and lemon juice together. When I get ready to eat it, I will throw on some pickled beets, some pickled red onions, the dressing and some kimchi. Simultaneously, I have sweet potatoes and carrots roasting in the oven. I know that you said sweet potatoes cook at a different time than carrots, but I will watch them both carefully. These will either be added to salads or just added to a bunch of cooked vegetables and tofu in a bowl. Thanks so much for the invaluable tips!!!!!!!👏🏽👍🏽🥰🎁💯⭐️

Yes! You gave me the answer Chels. We are moving in with our vegan kids for a couple of months until our little garage conversion is ready. I NEED to make COMPONETS instead of recipes. The kids are bread and sweet eaters so I need extra available options. I already rely on Broccoli Mum's zucchini/potato soup and YOU just gave me the other "rest of my available food" for our time there. THANK YOU!

I just started making Chef AJ’s cauliflower potato soup too, I think I like it better cause the zucchini soup can feel a little slimy to me, and the cauliflower doesn’t!

I’ve loved all of your videos so far. Especially talking about how you don’t need as much protein as everyone makes you think. It’s so hard for me to get 100 grams of protein and I do feel overwhelmed when I focus on that. And not to mention the fact that the healthiest people in the world that live the longest tend eat about 35 to 50 grams of protein a day. They aren’t body builders but they’re healthy ❤ and that’s the ultimate goal

I really like your HATS approach. I am pretty good about prepping stuff, but I need to work on making sure I don't have things in my environment that can get me into trouble, lots of times whole foods, but I end up making things I shouldn't like date and oat cookies or just eating dates; this is a food I shouldn't have in my house. I also like that when you are showing your plates/bowls of food you don't have such huge portions. I love big portions, but some influencers talk about eating so much food, you start to believe it and then tend to overeat. I really am learning a lot from you and can relate to you. Thank you.

Hi Chelsea, 75 yr old 15 yrs vegan, light exercise about 2hrs per day. Try where possible to remain whole food plant based. 2yrs now no oil no sugar and no salt. Still look like a beached whale and I cannot figure it out. Currently on a Juice fast - lost 4.8KG first week and 1.3kg 2nd week. Drink around 2 litres of juice about 80/40 veg/fruit. No additives just juice ( _Well not quite, I have 1 coffee per day, otherwise headaches are making me more miserable_ ). *Watching what your doing to see if I can use some of your methods, because when I come off my Juice fast, I want to find out how to keep it off* SO, started Juice fast 31 Oct 23 @ 104.8 KG (231lb) - Lost 4.8kg first week and 1.3kg second week - I will end the Juice fast when I am 85kg no mater if it takes five years or de*th. If I maintain 1.3kg per week it should only take around 12 more weeks. 🦘🦘🦘

Thank you for sharing 💚 Love this! I come from a background with not that much added fat. No mayo, oil, butter (margarine, I have cows milk allergy), dressings and so on. I actually has to be mindful to add a little avocado for my meals. For me it's like 20-40 grams and I feel it's a lot 😂 I feel more satisfied with just a little fat on my meal. I don't have any oil at home, and avocado and chia seeds are my main source of fat from "clear fat sources". (Expects pieces of chocolate 😅) I have a lot of food I am either allergic to, or have sensitivity with because of IBS. (My GP put me on low fodmap for 9 years ago, so I know about what to eat and so on.) We do need some fat, and I love that you say that, even though you follow the 50/50 plate and more "starch solution" way of thinking calorie deficit 😊 Just have to add the simplicity to it all too. I can't have onions but I buy a jar of pickled carrots with ginger and it's so yummy 😋 Highly recommended 😊 Probably not that hard to make either 😊 Feels like sushi bowl with it, and great with edmame beans, tofu/seitan. Soy sauce is the perfect topping, and probably some toasted sesame seeds too. Thanks again! Love from Johanne, Norway 🇳🇴

So good to see you Chelsea! I joined your program and lost a few kilos but left because of financial reasons. Fast forward to a month ago where I started a new job and found myself eating all kids of stuff from the constantly replenished snack table next to my desk 🫣 I gained the kilos back and feel horrible. I know it’s because I changed my environment. Starting today, I’ve cleaned out the fridge, steamed potatoes and soaked chickpeas. Cleared out my potato stash and made a grocery list. Going shopping soon. The habits I want to focus on are: starch prep and 30 min walk everyday. I’ll try having your podcast on/ watch videos as frequently as possible.
