Il primo statuto comunale (in cui, per altro, già si faceva riferimento all'organizzazione dei Bagni termali di Sellena) di questo che probabilmente fu anche centro etrusco risale al 1287, quando il suo territorio era compreso nel contado del comune di Orvieto; sono documentate, però, sue notizie già nel 1139, nel periodo in cui Clancianum apparteneva alla famiglia dei Manenti di Sarteano. Il comune, passato sotto il controllo di Siena, fu assalito, saccheggiato e dato alle fiamme nella cosiddetta "guerra di Siena" al termine della quale, nel 1556, entrò a far parte dello statuto mediceo. A proposito del toponimo, va ricordato che sino al 1957 il nome del comune era ancora soltanto Chianciano. Nel centro storico, noto anche come "Cianciano paese", si trovano i più importanti monumenti cittadini: il Palazzo del Podestà, ancora adorno degli stemmi di alcuni degli antichi podestà di Cianciano, e l'Arcipretura, che ospita il museo della Collegiata.
