• BLACK CARDAMOM | बड़ी इलाइची 5-6 NOS.
• CINNAMON | दालचीनी 3 INCH
• BLACK PEPPERCORNS | काली मिर्च 1 TBSP
• SPICY RED CHILLIES | तीखी लाल मिर्च 7-8 NOS.
• BAY LEAF | तेज पत्ता 7-8 NOS.
• CLOVES | लौंग 2 TSP
• MACE | जावित्री 3 NOS.
• KASURI METHI | कसूरी मेथी 1 TBSP
• NUTMEG | जायफल 1/2 NOS. (GRATED)
• TURMERIC POWDER | हल्दी 1/2 TSP

Marinating & cooking the chicken

• CHICKEN | चिकन 1/2 KG (LEG & THIGH)
• SALT नमक TO TASTE
• LEMON JUICE | नींबू का रस OF 1 NOS.
• GINGER GARLIC PASTE | अदरक लेहसुन कि पेस्ट 4 TBSP
• GREEN CHILLI PASTE | हरी मिर्च कि पेस्ट OF 3 NOS.
• KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 2 TBSP
• TURMERIC POWDER | हल्दी 1/2 TSP
• CORIANDER POWDER | धनिया पाउडर 2 TSP
• BIRYANI MASALA | बिरयानी मसाला 1.5 TBSP
• BRISTA OIL | बिरिसता वाला तेल 3-4 TBSP
• CURD | दही 200 ML

Honestly I’ve seen hundreds of videos for biryani tutorials and tried most of them but there’s always that something that just doesn’t fit right, they don’t explain everything like why i have to low the flame at this point and how much time i need to cook , when to add what things , how much oil , this is honestly the best biryani tutorial , I’ve subscribed to this amazing chef , Thankyou for such good explanations and asthetic videography 💗

As a Londoner I have been so scared of trying to make biryani for decades. It was always made to seem like only an Indian grandma would have the knowledge of how it it made, but you Sir have made it seem like a mere mortal could make it. I am from Pakistan but we cook Indian food, our elders are from all over India. Hello from 🇬🇧! Came here via Chef Makinson's reaction to your recipe. If I could just make plain rice as good as you I'd be a happy man, so fluffy! We deeply love Indian food over here, but usually restaurants serve British-Indian dishes. They're incredibly delicious, but I'm always curious to know how they would be prepared in their motherland, so finding Indian cookery youtubers is always a gift to me. I'm really impressed at how many little details you pack in your video, while making a recipe with a *lot* of steps seem doable for a beginner. Never wished I could taste a video as much!

Hii Sanjyot….. I wanted to take this opportunity to thank you for making these recipes…… I was never a fan of cooking and usually my husband cooks at home. But I have always loved chicken biryani and when I was in India my MIL would make it for me. When I came here to Canada no one was there to make it for me and I thought I should give it a try. And I have tried almost all your chicken biryani and I have fed a lot of ppl. Everyone has loved and I have never gone wrong with your recipes. I have made other recipes too like butter chicken and pani puri etc. The reason I wanted to comment is to thank you for making me like cooking . Your recipes encourage me to cook more and the details are awesome . ☺️

My tips 1) while marination oil should not be used, as oil slows the process of spice infusion and tendering of the protein. 2) while boiling rice, a large piece of crushed ginger, handful of fresh mint and dhaniya should be added to infuse more flavor to the rice. 3) a spoonful of rose water and kewra water should be added into the boiling water, it will give rounded personality to the rice. Least to say you are just an amazing chef. Your passion for food is very rare.

What u said is lucknowi biryanie. And wt he did was hyderabadi biryani. For hyderabadi biryani we won't use kewra water or rose water. Wt he did was perfect authentic hyderabadi biryani.

@@vasanthc4234 Hey Vasanth you are absolutely right. But after a lot of trials and errors, and years of learning I got the tips for a perfect Biriyani. And as they say a well groomed man should wear his fragrance, a perfect Biriyani should also wear its perfume.

The most challenging part of cooking chicken biriyani is to keep the chicken juicy not dry unlike mutton, which was to the point here. Although the receipe widely varies from Kolkata biriyani except the Aloo it looks delicious. Will try it sometimes.

❤from Germany. I made chicken and paneer versions of this on two weekends. We do not have fire stove and induction stove is not great for making dum. So we made dum in conventional oven for 30 minutes at 220 degree Celsius. Both turned out to be great 😊 They are our favourites now. Thanks for lifetime for this recipe. I’m never buying biryani masala in store again.

Method For Chicken Dum Biryani .STEP 1 ) Half kg onion for birista 15 to 20 minutes frying ( use birista oil for cooking biryani) STEP 2 )Biryani masala : 2 tbs coriander powder 1 ts jeera 2 ts Shah jeera 2 ts green cardamom 5 to 6 big cardamom 3 inch cinnamon 1 tbs black pepper corn 7-8 hot red dry chilly 7-8 bay leaf 2 ts clove 3 mace dry roast these spices on low flame then add 1 tbs of kasuri methi mix all well and keep aside for cooling after cooling powder them in mixer grinder while powdering add half grated nutmeg to it and half ts turmeric powder make a coarse paste now store this biryani masala in air tight container STEP 3 biryani cut boneless chicken ( or as you wish ) to be marinated add half lemon four tbs ginger garlic paste salt to taste 3 green chilli paste , two tbs kashmiri red chilli powder half ts turmeric powder 2 ts coriander powder 1.5 tbs biryani masala 3-5 tbs oil used in birista making 200 ml finely mixed curd add 80% birista , add two to three potatoes ( optional) and mint leaves and cilantro Mixwell all the ingredients for marination , give the marinated mixture a smoky flavour by using coal , STEP 4 - cooking is to be done ,take a heavy bottom vessel add two tbs clarified butter and let it be hot , then add the marinated chicken , stir fry it for 5 to 6 minutes on high flame then close the lid and cook it on low flame, make sure that the chicken gets cooked 80 %. 10 to 12 minutes will be required for 80 % cooking, rest of the cooking will be done while layering process.taste this semi cooked make sure that this chicken should be some extra salt STEP 5 rice preparation, take roaring boiling water add 3 bay leaves 1 inch cinnamon, 1 ts black cumin 3-4 green cardamom 3-4 clove 3-4 black pepper corn, 1 star anise two slit green chilli , 1 ts lemon juice salt to taste , add half kg pre soaked ( for 1-2 hours ) basmati rice ( not for half kg chicken you will need equal amount of half kg rice ) boil the rice in the above for five minutes ,don't stir the rice and let it be semi cooked.spread these rice on a plate and leave it for 10 minutes STEP 6 layering to be done as final step , spread the semi cooked chicken evenly on the vessel base ( use same vessel which was used to Cook the marinated chicken) then add chopped fresh cilantro and mint leaves , add the remaining birista and half tea spoon biryani masala now add the rice on the top , add two tbs of warm ghee ,add mix of kesar and milk for colour add some birista and chopped cilantro and mint leaves on the final layer , It's all set ,for "dum" Cover the vessel with lid and seal its sides with dough ( made with flour) place the vessel on tawa and cook it for five minutes on high flame and then 15 minutes on low flame . After this cooking let the biryani rest for ten minutes, don't open it immediately after the cooking Thanks Your Food Lab ❤️🤞

Small tips - birista banane se pehle onion ko 15 mins k liye salt ko accha se mix kr k rakh denge to birista accha banta hai aur time kam lagta hai. 15 min baad onion pani chodega yo pani alaga kr dena hoga.

I am someone who heavily relies on Swiggy and Zomato but for some reason decides to give this recipe a go. Haven't even made the biryani yet but trust me when I say this, the home made biryani masala that you advised to make, has made my entire place just as aromatic as the biryani ka patila. Cant wait for the marination to be done with to begin the actual cooking.. This is gonna be either surreal or an epic disaster. 😁 Can hardly wait for the result😋😋😋😋

It was awesome.. Better than all the Swiggy and Zomato biryani deliveries combined together that I ordered over the years. One suggestion to all the biryani lovers who plan on preparing this recipe .. PLEASE DOUBLE UP THE QUANTITY OF BIRYANI you wish to make . my family took more than 2 servings.. leaving almost nothing for me 😂😂😋
