❤ INGREDIENTS
2 boneless chicken breasts
3/4 jar DOÑA MARIA mole sauce
4 garlic cloves
1/2 tsp whole cumin
1/2 tsp peppercorns
3 cloves (forgot to mention on video)
1/2 tsp oregano
1 Tbsp chicken bouillon
1/2 medium onion (divided)
2 Roma tomatoes
small bunch cilantro
1 guajillo pepper
1 chile ancho
11/2 tsp salt
corn tortillas as needed
crema as needed
3/4 tablet Abuelita chocolate
8 oz. mozzarella block
queso fresco as needed
chopped onions as needed (optional)
7 cups water
● IN MOLCAJETE GRIND
1/2 tsp whole cumin
1/2 tsp peppercorns
2 garlic cloves
3 whole cloves
1/2 tsp salt (to help grind, optional)
grind well then add 1/3 cup water...set aside
●BROTH
2 chicken breasts
cilantro
1 tsp salt
2 garlic cloves
1/4 pice onion
7 cups water
(BOIL LOW FOR 35 MINUTES OR TILL
CHICKEN IS COOKED)...SET ASIDE.
●BOIL
1 guajillo chile
1 ancho chile
1 1/2 cups water
(BOIL LOW TILL CHILES ARE SOFT)...SET ASIDE
●CHOP BOTH CHICKEN BREASTS...SET ASIDE COVERED
!● GRATE MOZZARELLA CHEESE AND
CRUMBLE QUESO FRESCO...SET ASIDE
● fry tortillas in hot oil 1 at a time and fry to
soften, a few seconds on each side...set aside
● IN BLENDER
add 2 chiles with liquid
1/4 piece onion
2 garlic cloves
spices from molcajete
2 chopped tomatoes
3/4 jar mole sauce
1 Tbsp chicken bouillon
1 cup broth
1 tsp oregano
(BLEND WELL)
●IN DEEP POT
1 Tbsp oil
add mixture from blender
3/4 tablet Abuelita chocolate
bring up to low boil
add broth little at a time till perfect consistency to your liking, add salt or bouillon to your liking
lower heat to low/simmer- stirring non stop till chocolate Abuelita is totally dissolved, remove from heat after 15 minutes.
●PREPARE ENMOLADAS (mozzarella)
cover bottom of baking dish with mole sauce
dip 1 tortilla at a time in mole sauce (carefully)
put on plate and fill with chicken, onion, grated mozzarella and roll
set in a line in baking dish
pour mole sauce over ENMOLADAS
top with more cheese and put in pre heated oven 350° till cheese is melted...serve topped with crema.
● PREPARE ENMOLADAS (QUESO FRESCO)
add sauce on bottom of plate
dip tortilla 1 at a time in sauce
add chicken
add grated QUESO FRESCO
onions and roll, repeat process
set roll ups on plate top with chicken ,queso fresco, onions and crema...(no oven) ENJOY

This is one of my favorite dishes. I didn't know how to make the mole sauce with the jar, now that I do, I am definitely fixing this. I feel like I am in the kitchen with my mom watching your videos. Thanks for the lesson.

And I thought I was the only with this problem. Never fails, I always make a mess when trying to open the jar. I end up with mole flying everywhere. Just goes to show you, we DO learn something new everyday.

I love to watch U fix all this but after about 10 ingredients, I start to hyperventilate plus I wouldn7 know wher to start to look for all the different peppers etc. but I do admire your skills

Hi, if there are Mexican markets near you, or Albertsons ( look in the Latin section) you can find the peppers, they are inside of a plastic bag and large letters with the name of the peppers, Doña Maria mole, and the rest of the ingredients 😊. Hope this helps.

Well, they look taster with the mozzarella cheese, l'm going to try them, but the way I make my mole the way my mom showed me. But they do look good.Thanks for showing me how to use the mole like enchiladas in the oven. I really don't make my red or green enchiladas in the oven, only for parties. Thank you.🥰

Thank you for a new recipe for mole and especially thank you for doing the queso fresco enmoladas as well. I usually make enchiladas de mole with both real chicken and soy chicken and I make enchiladas con queso fresco with another sauce so this is perfect. I just love the ingredients that go into your mole as it slightly different than mine. Also learned about putting the chicken breast into the water when it's already boiling, didn't know that so thanks for the tip. Now of course I'm hungry as it's getting near dinner time. Thank you for another fabulous recipe! After making your wonderful chicken mole recipe, my husband has been after me to make chicken mole enchiladas. These enmoladas will be on the menu soon. And a big thank you for writing out the ingredients and instructions! Very helpful! I have just purchased a molcajete. Do you have any tips on curing and seasoning it? Dry rice vs. wet rice? Anything in addition to garlic for seasoning? Thanks so much!

Your very welcome! So glad you enjoyed the chicken mole, these enmoladas are so delicious!! Can't wait till you make them...I'm sure there are different tips on preparing a molcajete for use, I own three, and all three have been prepared with dry rice...I grind the whole inside of my molcajete and repeat the process until no more grey and no more chips, then I wash it well and season it with cumin, peppercorns and garlic (my trinity) these spices are very bold and will do the trick, thank you for your comment and support my friend. ❤

@@rachelcookswithlove thank you to the gal with original post asking about how to season and ready a molcajete! I didn't know you had to season and work it with dry rice. I plan on buying myself one as well as a tortilla press. Just to be sure dearest Rachel, there is nothing else to be done with molcajete? Like placing in oven after coating with the spices and garlic? Do I just rub the spices or grind them into it and then wash it? Do I let it sit for a period of time before washing? I just want to make sure I do it right and don't miss a step. Thank you so much Rachel for your videos! I've just moved home from being in the hospital then rehab facility and while I was away, your videos brought me so much comfort! You're so warm and sweet and wholesome. I absolutely, thoroughly just love your videos. Please don't ever stop and when the time is right and you get your cookbook written and published, I'll definitely buy one, but be sure to know, I'll always continue to watch your channel and support you that way first and foremost. I wish my fork would go through the screen! You always cook so good! I love your channel. I have a question: what is the difference between an enmolada and enchilada? I’ve never heard of enmoladas.

Enchiladas have a Chile sauce on them, and enmoladas have a mole sauce on them. Mole means sauce that is usually darker and sweeter than a thin red sauce. It has nothing to do with a rodent mole!

I just love mole and I think they would both be good if the one with queso fresco were hot also. I would just throw them in the microwave for a bit and get out of my way and do not disturb. LOL

Hi Juliette, I never have, but I think you could freeze the ones with mozzarella cheese (exclude Crema) and I wouldnt recommend freezing the ones with queso fresco, I just don't think the cheese would do well, I hope you get to make them, they are amazing. Thank you for your question. ❤

Mole is made with a variety of dried chiles and spices and when prepared with seasoning and other spices and either Mexican chocolate or other sweetener and prepared right, it is transformed into a most delicious dish. ❤
