I genuinely don't understand why everyone says this like it's super important. China, Korea, and Japan fried their food way before WW1 and Fried Chicken was started by Scottish. Then again, no fried chicken or black-owned fried chicken restaurant in the US taste anything close to the Korean fried chicken. I also want to add that KFC and Popeyes tastes so much better in foreign countries than the ones in the USA.

Effn purposefully ignorant vanity and deeply insulting to the cooking abilities and just basic reasoning of Koreans. You and the people who upvoted your comment genuinely believe Koreans just didn't know how to fry chicken themselves until some black GIs showed them? As if they couldn't just figure it out themselves? Pure hubris. Pure vanity.

6:03 the condensation on that container, yep definitely a ruined chicken there. You really just can't carry fried chicken on a closed container, and transport it over a figure of time. The moment it's out of the fryer, the time is ticking for the taste and texture to degrade.

100% was going to say that letting it sit in a sealed container ruins those different chickens. I've had all the variations and there is a huge, huge, huge difference in the product when it's fresh out the fryer vs bought, packed, and sits. You could tell they had to go to 3 or 4 different places to get the props. Why not just cook variations in the kitchen and give it to them hot.

I like karaage, had it in Japan and other countries. It is pretty on the low end, compared to a lot of other countries. Granted there is a lot of bad fry chicken out there, so until you eat a legit spot. You won't be able to tell the dif. Similar to Japanese Curry, its really low tier compared to curries globally, but most who like Japanese Curry never really ate other countries curry.

@@yummychips_ my family is SE asian and I prefer Japanese curry as the workhorse curry with other curries as a specific craving. I rate karaage near the top frankly because i've had more good karaage than good "southern fried" chicken. If I thought about it, I don't think i've ever had "southern fried" chicken that was amazingly good even at places people say are the best at it. Korean fried chicken is also good but I feel like it's an excuse to eat soy garlic sauce. And since my experience is that the average karaage and the average Korean fried chicken is always good but the average southern fried chicken isn't, theres no way karaage is low end.

Karaage is my favourite. When it's properly done, it's soft and juicy, and with high-quality meat, you don't want as much sauce covering up the meat's flavour. Japanese food in general is all about soft, subtle, and gentle flavours, and I much prefer that to the over-stated super herbed and spiced foods where all you taste is the spices, and not the actual food.

When I was in Korea I was pleasantly surprised at the quality of chicken there. But over the 3 years I was there, it's much like here in the US. You got your good , bad , and other. I was surprised by how many US brands were in Korea. And another thing that made me laugh was that in Korea Popeyes and Kentucky Fried Chicken had excellent chicken sandwiches, way before the craze here in the states. Even BK had good Chicken Whopper. It's funny to me the narrative of what's good .... if you feel like it give'em a shot. At this time now Jollibee is my favorite, but I've only had it 3 times.

Bad kara age... wet marinade, into potato starch. You need a craggy (no pun intended) exterior with extra bit of the potato starch to fry and coat the exterior for crunch. Sounds like this kara age was not properly marinated ahead of time.
