Chicken Fried Rice
Serves 2
Ingredients
2 Tbsp light soy sauce
1 Tbsp oyster sauce
1 Tbsp butter
2 eggs, beaten, seasoned with salt
2 Tbsp cooking oil
2 cloves garlic, chopped (approximately 1 1/2 tsp)
1 1/2 tsp chopped ginger
1/2 cup small diced onion (approximately 1/2 of medium size onion)
1 boneless skinless chicken thighs (approximately 4 to 5 oz)
1/4 cup carrot, small diced
2 cups cold jasmine rice, or brown jasmine rice, recommended a day old
1/4 cup frozen peas, optional
4 green onions, chopped
sesame seeds for garnish
salt and pepper

Just made this. Family loved it. Thank you so much! I just added red pepper flakes at end for a "kick" or spice. Will be adding this to our dinner food rotation and can't wait until my mom moves back, she will love this.

Excellent tip, mixing the soy and oyster sauce! Whenever I do a big batch of rice, I often have to race to pour them both and mix before the rice gets too over mixed or over cooked. Also my life changed when I switched from chicken breast to thighs. I will try this recipe this week!

This was amazing! I've been trying to find a fried rice recipe for my family and I to enjoy. I decided to try this one out but I didn't have ingredients such as chicken, carrots, and peas. Even without these my family loved it so much. I'll be cooking this again in the future and I'll add everything to make it taste better. Thanks so much for sharing this recipe :)

I finally got this right! Made a mess of my pan, but the food was worth the extra cleanup! Next time i make it (and there WILL BE A NEXT TIME), I need to figure out how I burned the bottom of my skillet :-)

Was your pan seasoned properly? Or maybe the heat was too high? Remember cast iron and steel have to be seasoned to perform well. Good luck and happy dishes....

@@peachlily22 hii! I cannot say if it's similar to restaurants since I rarely order fried rice and only eat it at home.. but I can say it has so much flavor and not bland at all :D. You can even experiment to it adding in your own twist to it! Sorry if that didn't answer your question

I've made this twice the past 3 days its that good! Really cant go wrong with it! If you're having trouble with the soy sauce just add and stir until it's all got a little colour, taste, add if needed and repeat until its spot on!

Me and my family love this recipe!! Ty for sharing! I cheat by using a rotisserie chicken and I order white rice from a Chinese restaurant and refrigerate for a few hours or overnight.

Hello, what size is your cast iron skillet? Does the food stick to the skillet when you cooked with it?

It's a Lodge brand cast iron wok and all of their cast iron products come pre-seasoned (I own a lot of their cookware) But you have to make sure you clean and season any cast iron properly after use so it will remain non-stick. Only use kosher salt to wash your cast iron. I know it sounds weird but using soaps will strip any pre-seasoning you've done on your skillets. Once your cleaned it well with warm water, kosher salt, and a sponge, dry it well with a dry towel and then place it on your stove top and turn it on to dry out any remaining moisture that's left in the pan. Water is cast iron's enemy so make sure you never submerge your cast iron in water. Use a steady stream of water to clean it and make your skillet is very dry before you store it. Season your pan with some type of fat to keep it non stick. I use canola oil but I know people use a variety of different things. Rub the oil into your pan with a dry paper towel, wiping out any access oil and then store in a cool dry place. If you do this every time you use cast iron it will last FOREVER!! I have cast iron skillets that were handed down to me that are fifty years old.

oh my goodness! I can't wait to try this recipe. I've had so much success with Asian food since I started watching your videos! I was wondering if you could do Mu Shu Pork. I tried making that twice before and failed miserably, but it's one of my favorite dishes. keep up your amazing work!!

I love how you present yourself, the joy in your voice, and how good your food looks. Brown jasmin rice, really??? I am so going to look for it. By the way, I love your wood cooking utensils and what you use to store them, and how colorful your kitchen is. Super girly, LOVE IT!!
