Chicken Long Rice is a favorite dish at luaus and informal settings like family
dinners, beach get togethers, etc. This is a savory and comfort food that children and adults love. Long rice is known by many names such as: glass noodles, vermicelli, bean thread noodles or cellophane noodles. It originated in Hawaii by the Chinese. Ingredients are found in most kitchens. The long rice can be found in most grocery stores or can be ordered from Amazon.

Thank you for this delicious recipe - I will make it! My kids will enjoy this as it will remind them of Aloha Mixed Plate. Their Aunt would take them there when they were little and have great memories.

In Central California, there are so many Filipino families (mostly Ilocano) whose fathers and some mothers went through the HSPA recruitment system in Hawai'i last century, that we grew up eating this plantation staple (one of many) thinking it was Filipino food. Yes, those days everyone shared food in their lunches. Hawaii has a multitude of recipes that are all mixed up so hard to know where they came from.

what kind of soy sauce is used? light or dark? can't wait to make some!

Any type of regular soy sauce, not the dark type. I like the Aloha brand from Hawaii. We have it in Vegas.
