Inoltre tutto questo fa parte di un progetto più grande ed elaborato che ha sempre sviluppato ma che ultimamente sta sviluppando più che mai, cioè quello di creare dei contenuti apparentemente leggeri per poi infilarci argomenti pesanti in modo da far arrivare questi concetti a più persone e con più efficacia

Io che guardo la video ricetta di Luis mentre affetto un petto di pollo chiaramente proveniente dall'allevamento intensivo con quelle che 10 anni fa erano considerate delle anomalie riscontrabili nel 5-10% dei petti di pollo, ovvero il "white striping" che indica la comparsa di striature bianche di grasso parallele alla direzione delle fibre muscolari e il "wooden breast", letteralmente petto legnoso che caratterizza petti di pollo di eccessiva durezza e consistenza gommosa, caratteristiche che ai tempi ne declassavano la qualità e ne destinavano l'utilizzo per preparazioni di prodotti trasformati (cibo per gatti?? mattoncini lego?? pneumatici??), e che invece oggi sono presenti nel 90% dei petti di pollo che troviamo nei banco frigo e che, incuranti, continuiamo bellamente a consumare fingendo a noi stessi che è tutto normale..

OMG during my childhood in Vietnam my Vietnamese mom made this exact dish for us once in a while (but with ground pork instead of chicken breast, and with milk instead of hard cheese cuz we didn't have hard cheese). We also called it lasagna, hence my massive confusion when I had the pasta-version of lasagna for the first time because I always associated lasagna with layers of potatoes.

In Romania we do this with pork and call it "musaca" (moussaka), and it's also my favourite dish. I recommend browning the chicken meat a bit before adding it to the tray for that maillard reaction.
