After raising and processing chickens for our family of 8 for a lot of years, I would suggest one change to your operation. Your set up is fantastic but remember when you butcher the chickens, Rigor mortis will set in to the bird. By putting them in the refrigerator, over night for a full 24 hours or even 48 hours will allow the meat to relax and be a much more tender bird. Then put them in the freezer.. You will notice a big difference in the meat. How fun to be able to start the new adventure. Good luck to you and God bless..

By the time they all get to the last cooler the temperature of the birds will be cold and be fine the go straight into the freezer. I’ve done it that way and checked the temperature of the carcasses and they are as cold as the refrigerator would be. I’ve put them in the freezer and later used them and they are quite tender. The freezing makes them tender.

Great info! I wondered if you could process old laying hens to eat? You answered that question. Thank you! Could you do a video on making dog food from your processed old layers? And maybe a lesson on the steps to process the old girls? You and Nancy are such a blessing! Thank you for sharing.

Nancy cooks down the laying hens in a pressure cooker. Then she makes chicken and dumplings and chicken soup with sweet potatoes noodles. Turns out, them laying hens are pretty good after all. She cooks down the meat for Bing Bing the same way. He loves it!

I do the same thing when ours are done laying. I use a pot on the stove & make broth just like I would with any other chicken. Once it’s ready, I pull the meat off the bone & strain the broth to make chicken & dumplings. 😋

When you are done with the processing it’s best to put them in a fridge for a couple days before you freeze them.

We just harvested 27 chickens & 2 HUGE turkeys this past Tuesday Small recommendations would be 1. Provide a catch tub or some sort of Output for feathers from plucker. 2. Water in scalder will need changing depending on how many birds you are processing- way too heavy when hot - we pour out - so a way to get that nasty water out of the way. 3. Looks like the waste water line is very small - parts definitely get washed away. 4. A couple buckets for compost parts ie… heads, guts etc.

So very nice to see ya'll again. Just recently, my wife harvested a couple of our Roosters and it wasn't as easy as it looked without the use of a chicken plucker. I see you picked up the same chicken scalder though that we did. It sure made a big difference and also can still be used for the occasional Fish Frys. Yep, this is a nice setup Hollis. We have the same plucker, scalding pot, and the burner. Funny how we are being told that everyone is doing great in this country and prices are at all time lows. But then real people like you with social media platforms tell us what we already know. Prices are high and times are rough. But Alas, we have God in our hearts. We are blessed with his amazing love and acceptance. All these hard times are manageable because of him. Peace and Love Neighbors

Sun shining. We have 7 to 8 inches of snow. Low temps. That will be great. Like set up for processing. Used to pluck chickins when young

Not sure how far along you are with rabbits but FYI Teal Stone Homestead channel has great builds for rabbit cages. I started with old dog cages because i could get them cheap at the thrift stores or yard sales. Teal Stone's latest grow out build is my next project for the rabbits. You've got a great setup going there!! Super happy for you!!🎉 fingers crossed I'll have a similar set up one day.

I got same type of set up and have a old small chest freezer to fill with water and ice to put the 10 I can do each day to soak in ice water for 24 hrs b4 I bring them in to finish cutting up and valcumn seal 😁 since I got my set up I haven’t bought any chicken meat, I raise my Cornish Cross for meat, and hens for laying, I don’t have a huge operation just a 10x28 leanto where I raise my meat chics and I set up my auto plucker and scaulder right infront of my cone stand which is all under a large oak once finished I wash and bleach everything down and pull it out to sun and after dry I put equipment back into my sheshed, I love your set up and steel counter, mine is a white fold up that I scrub down with bleach after each hen I clean out. Glad Nancy has you to help her, I raise 25 every year twice a year but my husband won’t help me process and it’s a job!

I would like to suggest something: If you make a wide opening at the bottom of your walls between the studs and finish them out so water won’t hurt it, then you could easily clean the floor down after processing. Some fiberglass board at the bottom will protect the walls.

Put some (frp) board on the inside of the dispatch room so you can rinse it down with the water hose after you finish

When I was 10, my mom and a neighbor lady processed 2-3 dozen chickens. Needless to say, even after all these years, we don't eat much chicken. I think it's great if you can do it. Best of luck. I'll enjoy watching Nancy cooking.

Thank you so much. I’m having to slow down a lot now due to age and health issues. I’m trying to do as much as I can but it is definitely less than what everyone expects of me. I guess I have to face the fact that I can’t do everything I want to do anymore but I can do it with some limitations. ❤️

That's a really nice set up. We grow and harvest our own chickens also. Our set up is quite as nice as yours but it works. Was wondering what breed of birds are you planning on growing for meat. We started of with the Cornish Cross. They do grow fast and are easy to raise but we wanted something that was more sustainable and could hatch our own. So next we tried the Bresse. We hatched and raised enough to get a flock going and when it came time to process and eat them we weren't very impressed with the structure of the bird or the meat. So we decided to try something else. We ended up trying the Improved Delewares. I think we got them as chicks from McMurray. We raised those up kept our biggest and best looking roosters and hens and butchered the rest. Now these do take twice as long as Cornish Cross to get to butchering weight but are a great bird to eat with good temperament. They lay beautiful large cream colored eggs which is a plus because you don't have to have layers and meat birds. And you can incubate the eggs and have your own source of chicks to raise more meat birds and replenish your breeding stock. Good luck in your meat bird adventure. You can sure tell I am a big city slicker because I had no idea what most of the terms you used were, but being one who likes to learn, I stuck it out. I’m such a hypocrite because I could never kill an animal but if it is already done up and packaged at the market, I’m ok eating them

Do you allow the processed chickens to age on the bone prior to freezing? I was told that the meat will be tough if you don't. Great set up. Our set up was very basic.

Darran and I have been thinking about setting something like this up. Thank you for the information and hope you can eventually get everything you wanted to complete your setup. Looks like it’s going to work smoothly. It’s going to be hard for me though when we start harvesting our hens, but all part of homesteading! God bless! Question: How old are the chickens when they stop laying and how long to you typically keep them before processing?
