CHICKEN SOUSE | BAHAMIAN COOKING
Ingredients
This recipe calls for 2 separate boils.
5 lbs. Chicken Wings (or whole cut up chicken cleaned and washed in vinegar and water)
1/2 medium Onion (chopped up)
1 tablespoon Salt (table)
1 tablespoon Garlic Salt
1/2 lime
1/4 pot Water
* Allow to boil for about 5 to 8 minutes then pour off and add the same amount of fresh water again.
For the second (2nd) boil, add chicken back into the pot of fresh water and allow to boil again for about 3 to 5 minutes then pour off water.
For the third (3rd) and final boil add chicken back into the pot with about 1/2 pot of water with these seasonings:
1 tbsp. Pepper Flakes
1 tbsp. Garlic Salt
1/2 med. Onion (chopped up)
1 tbsp. All Spice
11/2 limes
1 Celery Stalk
Table Salt to taste.
*Add Potatoes - Cassava - Carrots (optional) and allow to boil for 10 minutes then ENJOY with Johnny cake, Cassava Bread, Potato Bread, Home-made Bread, or soft grits.
*Chicken Souse can be served for Breakfast, Lunch or Dinner. It's a Bahamian Thing!

Tonight, I made this with your johnny cake recipe. Both were a hit with my family. My son said, "Mommy, why does Bahamian food taste so good?" I am glad that I am able to share a taste of my childhood with them. My parents immigrated to Freeport from Haiti before I was born. I left the Bahamas at 13 and never really got a chance to learn how to cook Bahamian food (sure did love to eat it though). Now they get to experience wonderful foods from Haiti and the Bahamas. All of your recipes that I have tried turned out delicious. Thank you, Melda.

I feel you on the crying part lol. There is a tip, breathe through your mouth when cutting onions. When you breathe through your nose, the onion's fumes travel through to your tear duct. Game changer

Another tip is to cut the onion with the open side down. The fumes which make you cry will travel towards the cutting board instead of up.

I completely messed mine up, I think I went to light on the salt. So a small cheat is if at the end the flavors aren't really coming together, add a little bit of Chicken broth to taste. I added like a quarter cup and it made up for my mistakes.

Chicken souse recipes have the same basic ingredients but everyone makes it differently. I miss the souse from Turks and Caicos and I can't replicate it at all 😭

Hello Kiny28, thank you for watching and supporting my efforts. The first two boiling were about 5 minutes each and the water was changed. The final cooking with the seasoning and vegetables would be another 10 to 12 minutes depending on your stove over medium temperature.
