Chicken Taco Soup
1 tablespoon vegetable oil
1 large onion, diced
1 Pkg dry taco seasoning
1 Pkg dry ranch dressing
1 - 32 oz box chicken broth
½ cup Edna Valley Chardonnay Wine
1 - 10 oz can Rotel tomatoes with green chilies
1 - small can green chilies
1 - 15 oz can low sodium tomato sauce
1 - 15 oz can black beans rinsed and drained
1 - 15 oz can kidney rinsed and drained
1 - 15 oz can sweet corn drained
rotisserie chicken, shredded
Brown diced onion in the oil over medium heat for 5 minutes. Add the taco and ranch dry seasonings and sauté for 1 minute. Add the next 5 ingredients and bring to a simmer. Lower heat to low and simmer covered for 5 minutes. Add the next 4 ingredients and simmer for 2 minutes.
Toppings: fresh chopped cilantro, cheese, sour cream, Tostito chips
Enjoy with Edna Valley Chard, Prophecy Cab, Kona Hanalei or Wicked Weed Pernicious
