This delicious curry is a popular dish in Goa, India and is made using red chilies and vinegar. Inspired by a dish from Portugal, this curry has an amazing flavor profile.
Here are the ingredients and steps to make this recipe!
20 Red dried Kashmiri Chillies
1 inch stick of cinnamon
6 cloves
1 tsp cumin seeds
1/4 tsp black mustard seeds
10 peppercorns
1/2 tsp turmeric
6 cloves garlic
1 inch stick of ginger
Add
1/4 cup Goa vinegar sub Red Wine Vinegar or Malt Vinegar
Water
1 kg 2.2 pounds bone in and boneless Chicken thigh meat
1 cup red onion diced
Clean, destem and deseed all of the Kashmiri Chillies and grind it to a coarse powder
Add the Cinnamon, Cloves, Cumin see & Mustard seeds, Peppercorns and Turmeric and process till to a powder
Add the Ginger & Garlic and the Vinegar in two additions
Add some water to make the consistency of the paste smooth
Add the masala to the Chicken and this needs to be marinated and left in the fridge for 24 hours
Puree one cup of red onion in the same food processor and store this in the fridge as well
After 24 hours, heat some oil and saute the onion paste and cook this for a few minutes to cook off all the raw onion taste
Add the Chicken and and all the red masala marinade
Give it a really good stir, cover and allow to cook
Add water to prevent burning
Add salt to taste, cover and cook on low for 30 - 40 minutes till the Chicken is done
Add more water as the gravy starts to thicken

I only discovered Vindaloo a few months ago - where have you been all of my life??? Really enjoyed this recipe! So much better than any of the others I have tried. The techniques are spot on! I made this with lamb in the Instant Pot: 25 minutes on high pressure and natural pressure release. Super tender and delicious. Will be trying chicken next. Thank you!!

Once again kravings night has arrived! Vindalho , lentils and rice. We always enjoy the curries a day or two after cooking them, firstly because your taste buds are so full of all the spices preparing and cooking them you can't appreciate the fabulous flavours, and as you say the meat has time to absorb all the flavour. Your videos are brilliant, no messing straight to the point and so easy to follow. # kravings

Looks delicious and great demonstration. Is it very spicy? What number on a 100% scale? Or, a pepper comparison - jalepeno, habenero, scotch bonnet etc. I like spicy but, have never used the pepper you cooked.

Hi Karen, Must give you the great news. I made your recipe but with beef and I did not use the pressure cooker , instead I put it up in a Slow Cooker which I have recently purchased. In Calcutta each family have their own version of vindalu and each feel theirs is the best. I called over a couple of friends and each one was told that I was preparing their recipe. So all came over most happily. Being a foodie I have all their recipes. When they arrived the entire house was smelling so so good. I opened it up after 8 hours of slow cooking. Trust me everyone went gage and even my thick headed friends have become you fan's. Already enquiring when I am making Karen's Vindalu next.

Love the picked up residue masala as you ground up the onion! I'm British and have eaten hundreds (probably several hundred) 'vindaloo' curries with potatoes (spuds!). One of my favourite curries, especially with chicken or lamb. I assumed that the chefs making it in the UK would avoid pork as they are mostly Muslim. I knew of the heritage (Portuguese) of the dish but it was really great to see it done properly (almost pickled). I'm making a curry once a week now, from scratch :-) I'm finding it hard to get Kashmiri chilli...gonna have to go online I think.... Enjoying you r videos Regards Tony

Tony, i second your comments on the residue masala onion, as i follow loads of recipes on curries and a few recommend an onion paste and this seems the perfect one and easiest one to do, it also uses the last of the vindahlo paste in the grinder, thank you Kravings :-)

I have finally found a great Vindahlo recipe that looks the bees knees!! Kravings your presentation is clear, easy to follow and the dishes looks amazing at the final result. I will give this a go this week as i have some Kashmiri chillies, i thought the Vindahlo dish is normally cooked with the seeds in, but i guess that is only if people want a hotter dish!! PS... could you do a video on how to cook plain basmati rice, i am hopeless at that and i think a few other followers may like to see it too :-)

It's not traditional, although I think some may use it to mellow the spice. But it's not meant to have tomato!

Yes removing residual masala is always a pain. I got a silicone spoon. Your tip of Vinegar and marination, removing seeds of chillies is very important. Excellent method. Thank you. Yours recipe is correct

I have Kashmari chilli powder , how much should I add.... as your instructions use the 20 dried chills? :)

You have to test it a little bit ...I would first add 3 tsps, taste it and add more if you feel it could be spicier.

Love the deep rich colour never thought the seeds would lighten the redness of the sauce, if I used beef would I cook it the same way on the stove top or in the oven

The real vindaloo is so good - beautiful red colour. I am gonna try it your way - previously i added some methi seed to the masala and a little tomato so I am curious to try now without those flavours.

For sure! Both Tomato and Methi are good in curries but not used in Vindaloo so it would be great to try something new!

fulloi karen . never de seeded...will try this. even grinding dry spices first . good tip. i like your mixer. also i find marinating outside fridge for five hours then in fridge. then next day bring it to room temp. n marinate for another two hours. great colour n taste must have been divine yes no patato in vindalho.

Onions paste helped to give a rich texture to the vindaloo and that's one of the reason this recipe looks more yummy and different from the other videos....enjoyed every bit of it whole heartily 😝😋😊

Oh, i enjoyed this vindaloo with fresh pav and also with idlis. It turned out delicious. The most authentic recipe unlike people adding jaggery and spoiling its taste.

I loved the way u said nana..... it brings tears to my eyes.. i miss my nana a lot. todays generation children dont even remember their moms..... Fresh coriander is fine but rarely used. Garam Masala and Kasuri Methi are never used in an authentic Goan Vindaloo. That’s more Butter Chicken.

Wonderful recipe. Thanks for the story behind the dish. In England the Indian restaurants use potatoes in this dish because of aloo in the name.

Aloo Hindi for potato, alho, Portuguese for garlic, an unfortunate obfuscation people don’t always understand, especially in restaurants and takeaways!

My guess is the chefs want to pump up the dish -to look fuller -w-potatoes in the bottom & protein on top while the plate is charged as protein. In other words to reduce their cost per plate.

heya ... this could be a little tricky. I would sub 1 tsp Kashmiri Chilli powder for 4 - 5 chillies in the the recipe. But use a little less and add more if you can handle it. The reason I say this is because many brands add other chilli 'fillers'

Hi Teri! I would start with 1 tbsp first grind the masala and when you're making the curry if you can handle the heat, add more. The reason I say this is because many chilli poweder brands may include other chilies. It's better to start with less and add more later. Let me know how it turns out.

Is this dish spicy? I've had vindaloos from restaurants and followed recipes before, but they're always downright mild. I want some spice! If I wanted to make the dish hotter, what would I do? Just add some finger chillies in with the onions or?

Vindaloo is never overly spicy. The Kashmiri Chillies used have great color but mild spice.

This is probably three years too ate to comment, but I made this recipe and it was delicious. Only it wasn't this video. It was a previous one where you said that that was the second one. Is this now a third video? It is a wonderful recipe and I lost my link. I am sure this is the same recipe, just not the same video. I lost my link to the original, perhaps I will never know. But I did make it and it was fantastic. There is no substitute for whole Kashmiri chillies. Which you soaked in the original one I saw. Thank for reading. A bit of an essay!!

In case anyone is listening, how do you cut through the chicken bones? I can’t think how I could do it without shattering the bone. Fantastic looking food by the way. How hot is it compared to the English takeaway versions, which can be stupid hot. It’s nearly midnight and I’m now starving 😬

Ha sorry! INMHO is not that hot. The best way to butcher without shattering the bones is to get it done at the butcher. They have better tools that what we do at home!

@@KravingsFoodAdventures As I promised myself I would do, just to see if there was a noticeable diff between a BIR Vindaloo and one made by your mum's traditional recipe that you have continued....My verdict!! Your version, compared to the usual BIR method I usually use, is obviously much more relaxed and sedate. The whole essence of BIR being based around speed, with a quick turnaround of meals, as people are sitting waiting for their food in the restaurant, but must also have the desired flavoursome end-product! Your 'traditional' recipe method (for me, AND my wife)...was absolutely fantastic, we both loved it. Whenever we're planning ahead on a vin-dah-loo weekend again (with the extra time-scale your recipe gives....) I'll be using yours ..and your mum's....again (with the addition of a small potato or two as well....) Thanks for your great videos..... 👌👌👌

Hmmm did you roast the spices?? It should not be bitter. Add a little sugar and see if that helps

@@lamiyaali3790 I am in New Zealand and found out that grinding raw onion gives a bitter taste. Saute the onion in a little oil and then grind it. Absolutely no bitterness at all.cheers

You can, they are both souring agents, but the taste will be completely different. The authentic Vindaloo taste does come from the Vinegar so as long as you're ok with it not being the same taste you are good!

This recipe looks lovely. Want to give it a try. Too bad I cannot find whole Kashmiri chillies here in Norway. I've driven pretty much every single desi shop keeper crazy about it, but no one seems to carry them:( Seems like they only import Deghi mirch or Kashmiri lal mirch powder.

I liked your receipe for Vindaloo and suggestions. But would have been nice if you had provided all measurements including liquids in grams. This helps a home cook make proportional adjustments per his/her needs. I follow many American and European bakers and chefs who provide all measurements in grams even including water or oil. With availability electronic kitchen scales (with Tare feature) weighing something is a simple task. Thanks!!!

Vindaloo is pork or it is not Vindaloo. The pork fat is what does the trick. 40 years ago no one had heard of Chicken Vindaloo. Then in the UK slowly Pakistani, Bangladeshi and Indian chefs made this hybrid dish called Chicken Vindaloo as Pork was untouchable to them but they wanted to cash in on this tasty recipe. You can use the same spices and process but it cannot be Vindaloo.
