Tried this yesterday and came out very well. I avoided the mustard seeds as I am not fond of the ground mustard taste (as in pachadi)..and instead of kashmiri chilli i used kashmiri chilli powder. The result was very red gravy and absolutely tasty! Thank you

Thank you! Also, do not worry about people saying this is not "authentic" because they obviously don't know what they're talking about. There is literally no such thing as "authentic vindaloo" because vindaloo is a heavily modified Portuguese dish from Portuguese spice traders to begin with. The "original" Portuguese variation is a completely different dish made with red wine (often that went off and was basically red wine vinegar), loads of garlic , potatoes and pork. ALL hot chilies are from North America, hot chilies as well as tomatoes, potatoes and corn were introduced to India by the Portuguese. Therefore, it's literally nonsensical to claim that your dish is "inauthentic".
