CHILLI GARLIC RICE
Ingredients
4 tsps red chilli powder
20-25 garlic cloves
3 cups leftover cooked rice
Salt to taste
2 tbsps oil
1½ tsps cumin seeds
7-8 garlic cloves, unpeeled
3-4 dried red chillies
2 green chillies, chopped
2 medium onions, thinly sliced
20-25 curry leaves
Method
1. Coarsely pound the garlic cloves in a mortar with the help of a pestle.
2. Add red chilli powder and salt and continue to pound to a coarse paste. Add this mixture to the rice and mix till well combined.
3. Heat oil in a non-stick pan. Add cumin seeds and let them change colour. Add the garlic cloves, dried red chillies, green chillies, and onion and mix well. Cook till the onion turns translucent. Add the curry leaves and mix.
4. Add rice, and toss till well combined. Cook till the rice is heated up thoroughly, while stirring in between.
5. Transfer on a serving plate and serve hot.
