Not all of China is Han, Xinjiang or Turkistan as it was historically called is a different Uyghur and other Central Asian ethnic groups who neither speak Chinese or have Chinese culture. There local architecture and clothing was like those of central asia. There historically were no pagoda style buildings in Xinjiang. There are hundreds of historical brick done mosques there and wooden column ones based on Persianate central asian architecture.

Actually, it is up to you to choose an architecture for a mosque as long as it does not include animal symbols, humanic symbols or other religious symbols (such as cross and swastik).

Mosques come in different styles and not all have the dome. There was some mosques in China that already had this style. But Making it "Hindu" style would require it to be filled with idols which is against the tenants of Islam.
