When you bite into this dumpling, you can really taste the result of the caramelized aromatics.
INGREDIENTS
For the wrapper
280 grams of all purpose flour
180 grams of hot water
1/2 tsp of salt
2 tsp of vegetable oil
For the filling
500 grams of ground pork
2-3 tbsp of vegetable oil (Amazon link - geni.us/jlg85dn)
1 cup of diced onion
1/3 cup of minced garlic
2.5 tbsp of minced ginger
2 tbsp of soy sauce (Amazon Link - geni.us/XhhnS)
1/3 cup of chicken stock or water
1.5 tbsp of oyster sauce (Amazon Link - geni.us/nmsF8)
1.5 tbsp of Chinese cooking wine (Amazon Link - geni.us/Bhf1r)
1/2 tsp of sugar
Black pepper to taste
1/3 cup of scallion
160 grams of corn blanched or frozen
For the dipping sauce
2 tbsp of pure peanut butter (Amazon Link - geni.us/NuU9TbS)
2 tsp of pure sesame butter (Amazon Link - geni.us/WRmWkHx)
1 tbsp of sugar
1/3 tsp of salt or to taste
1/2 tbsp of soy sauce (Amazon Link - geni.us/XhhnS)
1/2 tbsp of chinese black vinegar (Amazon Link - geni.us/JBaKmyL)
3-4 tbsp of boiling water
Chili flake and sesame seeds as garnish (Amazon Link - geni.us/wq0w7L)
INSTRUCTIONS
Combine the all-purpose flour and salt then pour the boiling hot water into the flour in batches. Stir to cooperate. Let it cool for a couple of minutes.
Form the flour into a rough dough. Add 2 tsp of vegetable oil and knead it until the oil is absorbed. Cover and rest for 15 minute. Knead it again for a few more minutes or until smooth. Shape it into a log then cover and rest for 30 more minutes.
While waiting, we can caramelize some aromatics. Add vegetable oil, diced onion, minced garlic, and minced ginger to the wok. Stir over medium-low heat for about 10 minutes or until the garlic bits are golden brown. Turn off the heat and add the chicken stock, soy sauce, oyster sauce, chinese cooking wine, sugar, and some black pepper to taste. Mix thoroughly.
Combine the ground pork with the caramelized aromatics. Stir in one direction for 3-5 minutes to develop the texture. Add diced scallion and sweet corn. Mix thoroughly and your filling is done.
The dumpling dough has been rested for 30 minutes. Roll it into a long even log then divide into 40 pieces (11-12 grams each). Lightly dust some flour to prevent stickiness. Cover with a damp towel so they don't dry out.
Take one piece of the dough. Dust it with a little more flour. Flatten it with your hand first, then roll it into a round wrapper.
Put about 1.5 tbsp of filling in the middle. The left hand holds the wrapper and the filling. Pinch the right corner and lift it up. Pinch a pleat on the bottom half of the wrapper, then make one on the top half of the wrapper. One after another. Repeat this all the way until the end. Rub the little tip to close the dumpling.
To steam the dumplings, line the steamer with a damp cheesecloth and place the dumplings in. Start with cold water. Once it comes to a boil, continue to steam for 12 minutes. You can also use parchment paper to prevent sticking. Just make sure you poke some holes to allow the steam to go through.
Serve with peanut dipping sauce.
Knowledge Point: The water ratio for this dumpling wrapper is 64% while the regular homemade dumpling wrapper is usually 55% or less. That is because hot water denatured some of the protein and the flour can now adsorb more water without being sticky. The dumpling does not contact the water directly while steaming, with a little bit of extra water that we forced into the dough, the skin will come out nice and soft.

With living in a smaller town, we have little options for good quality Chinese food. We adopted our daughter from China and I wanted to provide comforting dishes for her that she has some vague memory of (she loves noodles). It also allows me to learn how to make the foods that I experienced while there. Souped Up Recipes is among my top channels that I subscribe to for learning how to cook Chinese food. My Dad was Chinese, our family is from Hong Kong but he came to the states when he was about 6 and got bullied really bad growing up. Because of this he never felt comfortable teaching me about our culture. After he passed suddenly when I was 17 I’ve been studying all the time to get closer to my heritage. I appreciate you sharing this recipe so I can better make dumplings from scratch for my family. I know my dad would’ve liked to see me make them too

It’s embarrassing to admit but I’m Chinese and the daughter of a wonderful Chinese Mom who is an amazing cook! However I moved away after college and never learned to cook all the traditional Chinese, specifically HK, dishes I loved as a child. So when I found you channel, I was super thrilled to be able to replicate some of my Mom’s dishes. Your videos are professional yet easy to follow. You’re super happy which is a big deal for me b/c I love enthusiastic and positive people like myself. 😄 So in a way, it’s almost like learning to cook with a friend. The results is what matters so that’s why I subscribed. You rock! P.S. I think your style of cooking is an awesome representation of Chinese cooking and hopefully shows non-Chinese cookers that it’s worth a try to learn and enjoy.

My kids became fascinated with Chinese cuisine after taking part in a 3-week intensive Chinese language course. One of the favorite times of the course was learning how to make dumplings. Of course, I had to learn how to make them myself so that they could continue to enjoy this amazing dish! Your videos were the best I came across. I live in an area where good Chinese food is either too far away (like 1400 miles) or not good at all. A few years ago I came across your channel and have never looked back. I started watching your channel at the beginning of the COVID pandemic. We were locked down in the Bronx with restaurants closed and no means to get Chinese food delivered. If we wanted Chinese food, I had to make it myself. I started with something easy, like chicken and broccoli, and moved up to dumplings. My family was thrilled, I learned how to cook a new cuisine courtesy of your very detailed instructions, and I have continued to use your methods even though we can now get food delivered. There is nothing better than homemade and I am so proud that I learned to cook dishes that I was too afraid or frankly too lazy to do before. Thank you!

During the pandemic, I had to start cooking more for my family. They prefer eating Chinese food, so I took it upon myself to find more Chinese dishes. I came across your channel and decided to give your recipes a try. I've probably cooked at least 10 of your recipes and every single one of them always comes out amazing and my family absolutely loves it! I appreciate the little tips along with the reasoning that you provide that make a big difference to the final dish. One of the big lessons I've learned from your videos was that cooking takes patience, and a little impatience can make or break a dish. Every time I follow recipes from KZfaq, they come out well but something seems to be lacking and I cannot put my finger on it. However, every recipe that I've followed from you comes out extremely flavourful and I add it into my recipe book for easy reference. Honestly it was you! I like the way you give detailed facts, and make sure the food is the focus. You explain why certain ingredients are used, and why not to use others, but always seem kind and helpful as you do it. Plus you clearly love to cook and are proud of the work, so it’s great to watch you succeed and grow. As for the actual video that made me subscribe, it was the one that went through all the basics you need in your cupboard (Must have Chinese ingredients video). Not only did you give a full set of key ingredients AND explain the differences, you even showed where to look on labels and where to buy the ingredients themselves. That was tremendous.

You make your videos so easy to understand, explain some of the origins of the dish, give us links and/or substitutions for ingredients that might be hard to find, and are genuinely just so cheerful and relaxing to listen to. I actually tried to make dumplings for the first time last week using one of your recipes and although they weren’t perfect they were super tasty! Living in Hong Kong for 13 years, I got to try all kinds of yummy Chinese food - then I moved back to the states. Can't find authentic Chinese food anyplace, here they think Chinese food is deep fried balls of dough. I missed the food so much - your channel helps me understand why you do things in the order that you do and why. I have gotten much better in my cooking thanks to you, I can now make some of the dishes and the flavors that I remember . Thank you :)

I kept on getting reccommendations of your channel. Always do when a cooking channel will start to blow up. Totally sticked with u because of the vast amount of delicious Chinese recipes you were whipping up. Also very insightful to to the cooking methods u do(like explaining about how the wok shouldn't etc.) Watch lots of cooking channels but in terms of Chinese cuisine ur the one I keep coming back to so I definitely subscribed!

I have found your channel through a comment on a Reddit post and I have fallen in love with your content. Today I cooked these dumplings and they are absolutely delicious. I've been in Tianjin for 3 weeks as a 16 year old and fell in love with Chinese dumplings and cuisine in general. Ever since I've tried so many recipes but never found one that was as good as this. The dough was perfect, I tried the little rolling wood for the first time (made it myself yesterday specifically for this occasion) and was surprised by how well it worked! The one thin I still have to get good in is the folding technique. I've folded Bánh Bao and have gotten pretty good at it but it's not the same as with this dough. So I've used the Gyoza technique after failing the one you showed in the video... but I will surely learn it in time. Thank you so much for all the wonderful content you put on KZfaq. For people who love Chinese cuisine and want to cook authentic food this is absolutely perfect. All the best wishes from Germany! As soon as I got enough money on the side I'll buy the Wok! ;)

I clicked because I was looking for more authentic Chinese recipes, but subscribed because not only were your recipes good, they were thorough. I like how sometimes you give the history or background of a dish, and your videos are always very clear and measured so there's no confusion about when something happened. And I like that you explain why something needs to be done a certain way (I certainly would never have considered the importance of cold vs boiling water in my dough until it was too late). And I love the way you describe foods too, they make me so excited to try them!

I was searching for authentic chinese recipes - it's my favorite type of food. I've seen lots of videos but when I came across Souped Up Recipes I was immediately drawn to the detail you put into how you make the dishes, and I'm always so appreciative of the fact that you use science to explain things that I would've taken for granted so it's easier to follow the rules. I subscribed to this channel because I love to explore far-away places through cooking the region’s food. My passion for Asian cuisine is rooted in an event that happened when I was born. Due to the one-child policy and the Confucian preference for boys, I was abandoned by my birth family. When I was 22 months old, I was adopted from China. I now live a wonderful life in a rural community in the Midwest in the US. One thing I long for is cultural diversity and a way to connect to my roots. There is not much of that where I live, so I cook authentic food for myself that I imagine I might eat if I were to live in China. The Chinese food where I live is Americanized, so it is not truly Chinese. Cooking authentic food is a form of personal therapy, a way to comfort myself and to fill the void my birth family left. I've loved japanese cuisine for some years now but I hadn't actually gotten into chinese cuisine until I found your channel. You've given me a lot of love for this country. You love to cook and enjoy eating everything you cook and watching you is as satisfying as it is rewarding. You care so much about us and about making your recipes accessible to everyone with changes in ingredients depending on where we live and what we can cook. You not only teach us a dish, you teach us so many different variations so that everyone finds at least one they love. You're incredible. So the reason(s) why I subscribed to your channel is because: 1. I first found you through a dumpling video (it was one about maybe 2 years back?). I have a sister that is obsessed with dumplings. I didn't have all the ingredients on hand but made do with what I had in the fridge. My sister really loved the dumplings I made following your recipe (replacing with what I had on hand). 2. I always like watching cooking videos to learn specific techniques, etc. which I learned a lot from watching your videos, especially since your steps and directions are always very detailed (and if I fail in the kitchen, I know it's because I didn't pay enough attention to you).

As someone who has lived in Taiwan for several years and has always been fond of Chinese cooking. I really enjoy the content from this channel. My favorite recipe is the secret to crunchy chicken wings. I tried the recipe myself and quite enjoyed the crunchiness of the wings. 你的料理真的很厲害.

I subscribed to your channel about 4 years ago. I love Chinese food, it’s my favorite, but I wanted to learn how to make it myself. I got tired of paying for takeout 🥡. I had never even attempted to make it before but I was determined! The first dish I made was Kung Pao Chicken and it came out perfectly! I was afraid to cook anything, especially Chinese because I thought it was so hard. Fast forward to today. I’ve made at least 30-40 of your recipes! I have your wok, I want to buy another for my sister. My mother has a Stage IV incurable metastatic cancer and I’ve made so many dishes for her during treatment like wonton noodle soup. I really owe you a lot! I only felt comfortable learning from you. I didn’t get the fun, and educational vibe from many others on KZfaq that teach Chinese cooking. So for that, I thank you so much! I don’t even care about the give away. I just wanted you to know how much I appreciate you! Here’s to many more recipes, I hope!

Normally, when deciding to subscribe, I ask myself whether I would be sad missing recipes which was very true for your channel. However, when describing this more intellectual and less emotional, there were many reasons to subscribe: I love your selection of recipes covered which is a good mix between easy/quick and complicated/elaborate. You mention many tips and tricks. When trying out the first one or two recipes, the results were flawless (at least to my limited western standards). I like how you include the actual name of the dish in Chinese and that you make a lot of effort to research your dish, recipe, and ingredients. Moreover, you present the recipes in a very approachable way which invites me to try them out.

I noticed your precision in ingredients, the simplicity in which you explained in detail how to make each dish with substitutes too if any. I like how to tell us if it is an authentic dish or not and the truth behind each dish along with its tradition should it have one. I don’t recall why I first started following your channel. It may have been for the salt and pepper fried wings. My Bf & I started watching your videos early on in the pandemic. Initially to help calm us down for bed at night but once we followed one of your earlier dumpling recipes, that sealed the deal. We’ve learned so much about cooking from you. Chinese food has always been my favorite cuisine, love how diverse each dish can be, def much more than the take out most Americans grow up with. I lived in Xi'an China for 7 years. The food was to die for. I miss 焦子 so much! I've tried making them on my own but they always end up looking like little dead fish lying on the plate. I will certainly watch your "24 Ways to wrap dumpings" video. Perhaps I can eventually get better. You are such a kind and gentle soul. I love your videos!

I subscribed to you because after watching a bunch of your videos in a row, I really liked your teaching style. As someone who lives in South Africa, it's really difficult to find restaurants that sell authentic, regional Chinese dishes. We have the generic, Westernized dishes served here, so I know that when I feel confident enough to try cook your recipes, I'll be following authentic recipes. I moved from Minneapolis, MN to a small town in SD,. Was so spoiled by all the different Chinese, Korean, and Vietnamese, restaurants in Mpls. No restaurant’s within hours now where I live. So appreciate you providing how to cook all my favorite foods!
