This is pure genius! Most recipes take about 4-5 days to make croissants, but not in bigger bolder baking! Nah ah!!

This was actually the very first recipe I learned from Gemma I told her that I will make them then the other day she replied and I was so happy because non of the chefs ever replied to me😅

Hi Gemma! I just made these today - they turned out absolutely perfect! As a strict facto-vegetarian, it is hard for me to buy croissants outside due to the inclusion of eggs. This recipe was perfect; I swapped eggs for milk for the glaze and it yielded beautiful golden-brown croissants. Everyone at home loved it too! I'll definitely be making it again - thanks so much!

I learned that trick of grating cold butter years ago at school, when they still taught a subject called "domestic science". Always had and have great results. Taught my daughters to do it that way too. Every one loves croissants but it is a real chore especially in the African heat. Have to do most of the work very early in the morning. We don't have a/c. Will be trying this with chocolate for the family and marzipan for me. I'm so enjoying going through your videos and trying something new.

I made these and they were really good! Instead of chocolate chips... I put Nutella inside! I loved it... I also put butter inside of them and just smeared it on the dough before I rolled it up.... Tasted yum! Thank u Gemma for the recipe!

I also used margarine inside the dough and still tasted really good! I'll try making it with butter one time to see how it tastes hopefully!

I just baked the croissants this morning, and I set my oven to "bread proof" and it only took about 1 hour to proof the croissants. I heated my oven to 450 degrees F but as soon as I put them in the oven half of the croissants got burnt. But then I lowered the temperature to 350 and they turned out great! I love this recipe!😊

OMG such a great recipe!!! I'm definitely trying this!! I can imagine these croissants filled with dulce de leche (caramel) and icing sugar on the top once i get them out of the oven

I've tried above recipe, it's foolproof. Before each folding, I kept the dough in fridge for 20 minutes (it's very humid in Malaysia at the moment). The croissant come out perfect, I used honey glaze instead of egg wash. I started at night 8 and the dough rested well over night, next morning 6 proofing, 8am baking, 8.30am delicious croissant ready for our bfast.

This looks absolutely delicious! I'm sure that I'll be making this at some point! Just one little thing, the thickness of your dough was a quarter of a centimetre, not a millimetre :)

I can't believe you can make them that fast, I never attempted to make Croissants at home because they usually take a lot of time, but your way is so much time saving and the result is the same as if I spent a lot of time on them! THANK YOU SO MUCH FOR SHARING. I'll definitely try them.

Hii just a tip from a person who lives in a hot and humid region, just chill your flour and your butter in the freezer and after grating every few times just give the bowl a shake so that the butter doesn't start to stick together. I am giving this tip because when i grated the butter because of the hot climate it started sticking together even before i mixed it into the flour. So next time i tried the tip that i suggested and it worked! i hope this helps :)

omg.. grate the frozen butter into the mixture is such a great idea, i always let my butter soften (out from the fridge) in room temperature first before i work with it, so silly -__- and im soo gonna try this recipe gemma!!

Love this! The crust looks like a puff pastry, which means your recipe is much easier than the ones I've seen. I wish there was more chocolate in them because I love pain au chocolat and this reminds me of that, but I figure it didn't have that much chocolate because of the size you made them. Anyhow, I can't wait to try this.

If I'm very busy I will proof dough in the oven. I set the oven at 20C or 50C.( I normally set it at 70C. Becuse I'm impatient. 😊) Works wonderfully especially in Winter. Summer is generally hot so I just set it aside. Only use the oven method in Summer if it's been raining. Cools down a lot then. ☺

Grating the butter is what makes it blend so well throughout the mixture. Give it a go!

I made these a week back it they turned out delicious. My butter had melted in the dough a bit and it became difficult to work with but I rolled and baked them anyway and it turned out so good. Loved the texture and chocolaty treat 😍🙌

Wonderful! You can grate butter when you have time and mix it with some flour then freeze those butter curls. Very handy. Bake anytime you want and you butter is sure cold enough every time! While making croissant, whenever you feel the butter starts to melt or soften, chill the dough in the fridge for 20 minutes or so then continue.

Yum! I was watching a comedian who said, “It’s easier to make a human than a croissant. Croissant makers are planners. You could go in that bathroom over there and make a human in 20 minutes.” This looks easy. Maybe not as easy as making a human, but it looks easy and fun.

Anna Lorena Chan They were good, but they didn't turn out as soft and fluffy as I wanted it to be. Like it was perfectly cooked but then when I tasted it it was raw and I didn't want to bake it more because then it would get completely burnt!

loved watching your chocolate crossiant video. While living in Saudi I used to have crossaints for breakfast daily. Never thought it was made so beautifully. Your baking methods seems so simple and easy. I'm definitely going to try making it :)

Do you mean a creme pattissiere? this si a custard type confection, and does not stand baking, it can easily be added to the finished croissant though! :)
