A Chocolate Eclair is a delicious combination of crisp pastry, luscious cream, and dark chocolate. Eclairs start with a hollow, log-shaped shell of choux pastry that can be filled with vanilla, chocolate, or a coffee flavored pastry cream. The finishing touch is to dip the top of the pastry in a vanilla, chocolate, or coffee flavored glaze or fondant.

By far, the best channel/teacher to watch if you want to "learn" how to bake properly and not just watch people making food. I also appreciate that Stephanie bakes in smaller batches, so that if I make a mistake, I don't waste a lot of ingredients

This is my first food memory. Standing on a chair and helping my mom make choux pastry at age 3. Every time I make choux pastry or even gravy, and smell the gelatinized flour, I remember that day. Great video once again, Stephanie! Many thanks!

I made a double batch of these and brought them to a church party this morning. They were gone in 10 minutes. Most of the other food was store bought. About 4 square feet of Costo sheet cake was leftover but I had a clean tray. :D

Yes, I did say that in my headnote and that I was breaking from tradition by using a vanilla pastry cream and a chocolate glaze.

about to make these for the third time. They are so good! I am a 15 year old guy and people are surprised if they find out I cook... lol just follow the directions and your good and once you are done you get a ton of good food all to yourself :P

Iv made both your blueberry/carrot muffins/yoghurt cake.The consistency is incredible of the finished product.Totally amazed that if I follow the recipe it will work unlike other chefs/bakers.Somehow the recipes just dont turn out as yours.Thank you for giving me the confidence to bake and cook with ease.

Very clear instructions, I have always made perfect profiteroles, but this is my first time with eclairs. Had a problem filling, as my ordinary plastic bag was wobbly. Will try a proper one next time. They looked fine, if a little misshapen. My wife was impressed.

Once you cover and store the choux pastry, it does soften. You could try reheating it to make it crisp again.

My mum was a great baker and she used to use all your recipes she passed away 5 months ago from covid and I've started baking because it reminded of her and brought me peace so thank you so much you don't know how much this means to me

@kaavya I lost my beloved mother almost4 years ago. We, as a family, lost my Godchild/niece hours apart. Different states, age 30. Very suddenly. Two of us daughters begin quilting, because we wanted to carry on my mothers love. How I wish I’d paid a lot more attention when mother made pie crust. With her it was a touch here, drips of water there, and always the best, most flaky crust ever. Happy Baking, and I wish you peace until you are with your mother again!

Thank you (and your husband) for putting your time and effort into making these wonderful videos! As a novice baker, I really appreciate your detailed instruction. Some people have questioned your 'joy of baking' as you looked quite stiff in some videos, and I find these comments very rude and nonsense! Who isn't nervous in front of the camera? And most importantly, who would put tons of his/her time, money and effort doing something Free Of Charge without enjoying it? Once again, thank you !

I've been watching you for a couple years now, and recently got a stand mixer to really roll up my sleeves and do some heavy duty baking. I made your spritz cookies. I can't make them fast enough now, it seems. I got an awesome cookie press on Amazon for 30 bucks, and it makes just the most beautiful shapes! Thanks for making these videos. I always bake the puff 375F for 15mins the turn it down 350F for another 20-25 mins. inside nice soft crips outside. I love Eclairs or cream puff. I always put little rum in pastry cream. very easy to make it and not expensive.every time I brought it for potluck, they loves it.thanks for sharing it.

Love watching your baking recipes! You always have tips n tricks. After I made my cream puff n I realised that ml is not equals to gram (your detailed email clarification with examples!), I went to buy a weighing scale. N baking now is even more fun!!!

The brands are normally use are Mayfield, Land o Lakes, and Organic Valley heavy whipping cream.

Were they still a little wet inside, as that would cause them to deflate. You bake them first at a high temperature to set the shell and then they are baked at a lower temperature to dry the inside out. Maybe they needed to be baked a little longer. If the glaze was too runny, you could add a little more chocolate to it.
