Been working with Chololate as part of a workshop and I was introduced to a method using a sous vide machine to do the tempering. Doing the heating with the sous vide and cooling with ice. If your ever working with it again, it's a great method, plus the final stage is good to leave it for up to 12 hours ready to go into the mold, so there is no rush.

So with those machines theoretically if you let the chocolate continue to grind in those machines it would get better or is there a point where you can't get it finer or the quality isn't good?

I believe that's what we were measuring for, the point where it'll be the finest and smoothest. I bet you could keep going and make it even smoother, but the average person wouldn't be able to notice the difference anymore.

easier way to temper a chocolate is tu put solid piece of cocoa butter (or already tempered choc) to melted chocolate, it will temper ir.

You got my thumbs up partner but a necessary clarification. Those machines are not called conchers...they are melangers. Also, you need to make a distinction between refining and conching. Conching has absolutely nothing to do with reducing the particle size. Refining is the process of reducing the particle size....and conching is the extended mixing of refined chocolate with some heat.....which drives off the acids and other volatile flavors. A melanger does both refining and conching.

+boy638 If you don't temper it a number of issues could happen. Instead of usual crisp texture, it can have a spongy consistency. It might not set solid, or could turn out really hard. The cocoa butter could separate and you end up with streaks or blotches in the chocolate.

Your way of sugar extraction from sugarcane was wrong. Just slice the hard cover with a knife or even your teeth. Cut the inside pieces and use two metal bowls to squeeze the hard. Strain it and use the liquid.
