Many of you have asked me for recipes without flour and here I share one of them. A chocolate mousse cake🍫WITHOUT FLOUR, very creamy and with the great flavor of chocolate, come with me to see it.

⏩Ingredients (7 to 9 slices):
Cake (mold 43x33 cm):
120 gr of Dark Chocolate (I used 72% cocoa).
100 gr of Butter (1 stick and 1/2 tbsp more).
10 g of natural cocoa (1 1/2 tbsp).
120 gr of Sugar (1/2 Cup + 1 Tbsp).
10 g of vanilla sugar or 1 tsp of vanilla essence.
7 Eggs at room temperature (350 g of liquid).
1/4 tsp salt + 1 pinch for the egg whites.
Chocolate Mousse:
180 to 200 g of semi-sweet chocolate (You can use the couverture).
120 gr of whipping cream or half cream (to melt the chocolate).
450 ml of whipping cream or whipping cream (not too sweet).
30 g of sugar (2 1/2 Tbsp, Optional).
30 to 40 g of Chocolate to grate.
Syrup for varnishing:
50 ml of Water.
1 1/2 to 2 Tbsp of Sugar.
1 1/2 to 2 tsp of coffee (Optional).
⏩Convert measurement to different rectangular molds:
30x40 Cm multiplies by 0.84.
38x26 Cm multiplies by 0.69.
⏩Tips and recommendations:
1, If you are going to glaze the bread to make it more moist, make sure that your syrup is hot so that the bread absorbs the liquids.
2. To give the mousse a different chocolate flavor, you can mix it with dulce de leche chocolate while the cream is still hot. You can also add caramel or some essence that you like. If you want to add coffee, mix the whipping cream with one to two teaspoons of instant coffee to dissolve well and add it to the chocolate.
3. You can decorate the cake with a chocolate ganache by mixing about 50 g of couverture chocolate with 50 g of whipping cream or half cream. You add it when the mousse is cold and put it back in the refrigerator for another half hour or so. the coverage is firm.
