Some bakers want to put a temporary center dowel in their cake as they ice to keep their layers from shifting. I think these bakers might not chill their assembled tier before they ice. We always chill our tiers and we never use the disks with holes. But it's all personal preference. If you purchase the disks with hole you don't have to use them, and we do not charge any more for disks with holes. Let me know if you have any other questions. -Rachel
