Christmas Jam
There is nothing as nice as knowing that someone took the time to make a gift for you and this Christmas Jam is a special gift indeed. I hope that you can see from the video that its not a hard process to make jam and that if you haven’t made it before you will give it a try. I am using liquid pectin in this video but suggest whichever way you go that you follow the direction for that product. If the majority of the fruit in the recipe is strawberries then follow the directions for strawberry jam.
340 grams or 12 ounces of frozen or fresh cranberries
600 grams or 20 ounces of frozen or fresh strawberries
2 tsps of orange rind and the juice of half an orange
¼ cup lemon juice
The first 4 ingredients when measured should be 3 ¾ cups. Then add the spices
¼ tsp cinnamon
¼ tsp ground cloves
1/8 tsp ground nutmeg
Blend these ingredients together using a hand blender, a food processor or a potato masher. I used the hand blender.
Add 7 cups of white sugar and mix well. Then put the mixture on the stove and bring to a full rolling boil. Add a tsp butter and stir it in. Boil hard one minute and then remove from heat and add 1 package of liquid fruit pectin.
Stir about every minute for about 5 minutes. Skim off any foam that remains and put into hot 1 cup jelly jars. Put on fresh seals and the rings. Put the jars into boiling water that covers the top of the jars and boil for 10 minutes at a full boil. Remove the jars to a towel on the counter and allow them to cool before labelling and preparing them for gifting.
