I don’t eat wheat but I know that you have a baking degree, so you know your recipes. It’s probably all the eggs, butter, and sugar that make it moist. Maybe another substitution for the maple sugar would be date paste? Dates have a lot of nutrients. Holiday favorites don’t always come with nutritional purposes. Maybe the only nutritional and fully digestible bread was Manna. They even made cakes out of it. Interesting how our versions of flour changed throughout history. (Exodus 16:31)
