Arguably one of the most stunning red mushrooms you will every seen. Known by savvy foragers this mushroom is lauded for its flavor, texture and suitability for sautéing! Cinnabar-red Chanterelles or Red Chanterelles for simply Cinabars: scientific name is Cantharellus cinnabarinus. Thriving in rich soil of mixed hard wood forest they can be found in scattered loose groups. They are mycchorizal fungi and live in a mutualistic symbiotic relationship with tree roots often with oak trees. Their flavor ranges mild to lightly peppery or floral. They can be confused with toxic species such as Jack-o-lantern mushrooms. Look for a dimple in the top of mature specimens, false gills and decurrent gills part way down the stem.
