Palpatine intentionally had the Empire fall following his death so the most competent Imperial leaders can rebuild and destroy the New Republic. It is like let the Rebels create the New Republic and establish a capital before we use our new super weapon to destroy their new capital. Heck, the First Order had dozens of agents in the New Republic.

Donovan Hall honestly the New Republic shouldn't even exist yet. There would've been a galactic parallel to the Dark ages bridging the Empire and the New Republic. It would've taken at least a few decades to rebuild everything

They were so hellbent on being anti prequel that they refused to speak about politics for more than a few seconds. Ironically they went so far with this that it ruined the entire trilogy.

they demilitarized before the rise of The First Order when there was actual peace. The Alliance was a rebellion that overthrew a military regime and the last thing that they would want to do was look like another military regime.

ErbiggieSmallz Mon Mothma wanted to decentralize the military, but wanted planets to have their own militaries. The idea was that if a threat emerged, they would just create a coalition of those forces and use them like the New Republic military.

I think the way it's presented in this video actually makes a lot of sense. Idealism and the wish to avoid repeating the past were the primary motivation to reduce the military, and political machinations from the first order crippled the new republic's ability to react swiftly enough to change that decision.

Because JJ Abrams wanted to rehash the Rebellion vs Empire by turning the good guys into the underdog resistance movement *again* instead of being the reigning rightful legitimate government of the entire galaxy.
