For lots of different reasons, we all need to cook for one now and again. As a stay at home mom, I do it every day! I thought I would share some great single serving recipes for when you need just enough for one! These are some of my favorite easy single serving meals (for lunch or dinner!)

Here are the measurements for these recipes:
Pizza dough:
2/3 cup all purpose flour
1/4 cup water
1/2 tsp baking powder
1/4 tsp salt
1 TBS oil
blind bake 425* for 5 minutes, add toppings and bake for additional 7 min
Falafel:
1/2 cup canned chickpeas
1/8th large onion
a shake of the following spices: salt, pepper, coriander, cumin, garlic powder
3-4 TBS flour
Crescent roll galette:
4 crescent rolls
2 eggs
fillings of choice
bake at 375* for 20 minutes
