Mr. Chaplin is part of sleep routine. I make one of his recipes and eat it. Then I'm ready for bed as I fall asleep listening to Jack cook and tell his stories. 😊

Daddy Jack is a master of his art. I love how he uses everything and wastes nothing, I mean onion skins in a stock, when you know you just know! I started following Mr. Chaplin several months ago, spent many hours watching his “how to videos” and I have improved my abilities to new levels. I love to cook, never attended culinary school but I have read hundreds of cookbooks, applied the knowledge and with the help of his videos, moved to the next level of cooking. Spend the time, work in a kitchen ( I did while in college) and be creative, worst of the worst, you just end up with expensive dog food. This man is an awesome Chef, shares his passion and knowledge for us to learn, cant ever thank him enough for his generosity.

I've been a butcher my whole adult life, and I can say those are the meatiest short ribs I've ever seen. Gotta love short ribs, but they've gotten so popular the price is crazy anymore.

Everything that used to be thrown away becomes gold, that's the way it works, from lobsters to chicken wings, on the flip side electronics and saffron get cheaper, crazy shit

The animals are bred to be huge and for ground beef- you can’t use the steaks except in Costco- burger chains, frozen food producers, etc. - this cut works because it is NOT a steak - it’s a Restaurant Depot product and served in a single portion- braised longer they shrink maybe 25- 30 percent more and look a little more reasonable as a portion
