Clay here's a simple recipe. Once plucked cut the duck into 6 pieces cover it in flour with salt, pepper, ground cumin, ground corriander, smoked papika and garlic power. Keep it cover in the flour for 2-3 hours until the coating around the duck has tacky feel to it not where its sticking to your fingers. Then shallow fry or deep fry it for roughly 6 minutes, then let it rest for 6 minutes and eat.

Wild duck breast marinade - plum sauce, soy sauce, Chinese five spice (pinch), chopped garlic & ginger - give them a couple of hours then flash fry/add to stir fry - keeps me going back to the salt-marshes for more..... All the best Clay, keep up the good work

Like the throwback Thursday Clay, its like sitting around the campfire with you . I was out last week in wet conditions on the Jetski, a few nice fish around but it can be hard yards some times. Keep up the daily videos, I admire your dedication. Cheers

After you butcher the duck, quarter it and salt it over night. Spice the salt if you want. Next day rub off the salt with a damp cloth. Melt down enough of your lovely leaf lard to cover the duck portions. Add bay leaf, whole chilli, star anise, pimento, ginger and garlic. Put the whole lot in your camp oven and bring the fat to 85 °C /185 °F. Cook until the meat is tender, breast will be done first then leg. You can preserve in jars covered in leaf lard. To eat reheat in oven or fry in pan until crispy. Serve with cooked Puy Lentils finished with balsamic vinegar, ginger, tomato juice or paste, garlic, spring onions and chilli flakes.

I have never heard of putting butter in a mouse trap, peanut butter, but not butter. When I was a kid, we always put chedar cheese.

I use to catch a few on butter here. The peanut butter stopped working so I went back to butter. Its not working either

Here's another something to try also off the duck topic, but its a goodie wrap your venison back steaks in wild bacon and if you have it available top it with creamed paua, it would have to be the ultimate surf and turf.

Apparently peanut butter with a dog kibble on it works well in rat traps. We aren’t bothered with rats, so I haven’t used this method personally. Happy ratting buddy.

I put a few in my slow cooker for about 5 hours with just slightly more water than was needed to cover the meat. Tossed in some garlic, onion, pepper, salt. When they were done and we had a good broth, dumped it into a pot brought it to a boil. Added some vegtables, and then thickened the broth to a loose gravy. Dropped in a load of egg noodles. When it was done we put it over some mashed potatoes the wife made. Was good enough it converted a couple people that hated duck, to duck eaters. Only thing that could have made it better would have been some mushrooms, but one of the folks has a mushroom allergy. Give it a go bud. I use a similar recipe for cooking other tough game meat for people that are skeptical of eating wild game.

Works well with our woodchucks, squirrels, and raccoons too. Makes the meat super tender. It would probably be pretty good with the possums you you have over there.

Hey Clay, for that mice problem you got there, you could try checking out "rolling log mouse trap" or "walk the plank mouse trap", there are some videos on youtube about them, they are really simple and cheap to make/buy, but they work incredibly well. They can catch as many mice as the size of the bucket you use and don't need to be reset between catches, just leave them overnight somewhere near the trailer and you'll have a bucket full of dead mice in the morning. Are you gonna try to remove the Lipoma with help of a surgeon or are you trying to out some sort of diat or special creme? Also if you want to get rats or mice you might want to try peanut butter (don't know if you mean normal butter or he peanut one) or nutella or a similar chocolate product. We had surprisingly luck with those two. And maybe when you have put the butter/chocolate in the trap put some ducktape (tape in general) over it so that its a bit more difficult for the rats to reach it.

No point in removing the Limopma. It is only cosmetic and Bruno does not give a toss. Also, any type of surgery always runs the risk of infection. No point really.

Old gin traps with jam always work well for rats, caught hundreds that way. Bloofy good looking pork, done that with quail before and always tastes bloody good

Hi Clay I lived in Thailand for years and have Thai wife she made Thai red curry simple recipe 1/4 duck cube butter but squash tin cocoanut milk garlic ginger Thai red curry paste to your taste salt plus any other vegis you have slow cook till tender I leave veg till last 10 to 15 minuets so that firm . can cook all game and fish with those recipe

Ingredients 4 duck breasts, skin on 1/4 cup maple syrup 1/2 teaspoon cayenne pepper 1 tablespoon brown sugar 1 pinch salt and pepper Buy Ingredients 1 Using a sharp knife, trim off any extra skin around the duck breasts. The skin should just cover the meat, not overhang at all. Also, slice a few slits into the skin with your knife, being careful not to cut into the meat. 2 Season the duck breasts with salt and pepper and place them, skin side down, in a dry, cold, large skillet. 3 Place the skillet over medium-high heat and cook for about 5 minutes. Starting the breasts in a cold pan will help the fat render out of the skin. 4 After five minutes, the skin should be starting to brown and the fat should be rendering out nicely. If it isn't browning, turn up the heat a bit. 5 If the skin is browned, flip the breasts so they sear on the bottom side. Cook for about 2 minutes, then flip back over to the skin side. 6 Add breasts to a 400°F oven and bake for 4 minutes, skin side down. If your pan is oven safe, you can move it right to the oven, otherwise transfer your duck breasts to an oven-safe dish. 7 Remove breasts from oven, flip them (skin side up now), and baste them with maple glaze. Return to oven for 4 more minutes. 8 Remove from oven and glaze again. Let breasts rest for 5 minutes. 9 Slice duck thickly (1 breast should be 4-5 slices) and serve immediately.

If you can get hold of it online, buy some Himalayan black salt. It is actually grey and tastes like sulphur. It is just the best with wild game and also any red meat. Kelp powder is also another alternative that tastes great with meat.

Love my duck! Having been an avid duck hunter most of my life I've had duck more ways than I can remember. Your recipe for roasting looks great but no apple? The ponds and lake that I used to hunt (for close to 20 years had an apple orchard so it became a habit to add ripe diced apples to the cavity. Really added a sweet mild flavor. I've also used apple juice or cider as a brine in lieu of water for soaking to add flavor, tenderizer, and takes any 'gamey' flavor out. Give it a try sometime. Happy hunting.

Tea smoked duck..always one of my favorites. Just google it, popular now, but always a good go-to. It's envolved, but man, i gotta tell you, the end result is incredible. Alot of the ingredients are hard to come by depending on where you are, but if you follow the techniques involved, you can adapt the recipe to fit any situation.

Heat up duck body in oven, then remove from oven and rub all over with butter..after a few minutes, rubb plum jam all over duck, place in oven 180 , baste, turn at least once..

We breast the ducks and cut the breasts into cubes and put them in a bag with coat and cook and some added salt and pepper and then fry them in a pan with oil
