Thank you for this. I’ve watched other videos and they have missed the step of heating, cooling and oiling the pan multiple times. No wonder my pans have always turned out just OK.

I usually use grape seed oil to season the whole pan. Makes a really strong layer. Flax seed tended to flake on me. Idk why.

A couple months ago I looked up everywhere for good tutorials on how to do this because i also got myself a pan secondhand. Noone ecplained it anywhere near as simple and good as you did, which is why the result is very meh.... I'm gonna try again immediately. Thanks already!

Thank you very much Brandon! This video was especially helpful and interesting. The pan was in sad shape and ended up looking almost new, and the process is very easy. I have an old cast iron fry pan I'll try this on. Recently, I bought an enameled cast Dutch oven, beautiful, and did much research on prepping it for use by seasoning it with oil. Used grapeseed oil, but it was a *disaster* and nearly ruined the pan because the oil turned into a glue-like substance and was almost impossible to remove. It took days of scrubbing with a variety of implements and products. Any suggestions? Your humor in this one is fantastic....love your videos!

I use America’s Test Kitchen’s method. Put your cast iron into a self cleaning oven cycle. It will remove everything. Then you start layering flaxseed oil and baking it. It takes a while but my cast iron is non stick now. Very easy to clean and maintain. Look up ATK Cast Iron Seasoning.

The oven helps it dry faster after rinsing so it doesn’t start to rust before you start seasoning it.

Haven’t tried avocado oil but we started using flaxseed oil when americas test kitchen recommended it and it made an astonishing difference compared to what we had used previously.

I use their method too. Using the self clean oven cycle to remove rust and old finish was a game changer. All my cast iron is no stick now. ❤

You need use a led / other heavy metals test kit. Sone people use them to smelt metals but it contaminates them. It's super important that you check this, especially if its a old one (some were manufactured with lead) or its thrifted.

No matter what you hear you absolutely 100% can use dish soap. You can even scrub with a nylon brush and it does not affect the seasoning if you reseason it after washing for like 5 minutes on stove

​@KN-lu5ty - Absolutely agree. I only need a few drops of dish soap most of the time. I've been using everything from 100 year old pans to relatively new pans. Never harmed any of them. Sometimes I only need salt and water, but most of the time, dish soap and water. The key is to make certain they are completely dry after washing, and then give a quick reseason on the stove top, and it's good to go. (I use my cast iron almost daily, and I rotate the ones I use.)

Don't understand at all the constant parroting about no dish soap lol!! It's sad because people literally don't try cast iron because they hear they can't wash them. And they're life changing

i think the oil burned on my pan there is a sticky dark layer it left on

When there's a "sticky residue" on the pan, that means you used too much oil and didn't wipe away enough of the excess oil before you seasoned the pan. Food will stick in those "sticky places." It can be fixed. Try reheating the pan on the stove top or in the oven. Once it's blazing hot try using a thick wad of papertowels to rub out the sticky spots. The goal is to redistribute the extra oil across the cooking surface and to blot up the extra oil as you can. Over time as you use the pan the sticky spots should disappear. When you re-season the pan be a miser with the oil. Less is actually more.

Never got while those cast iron pans are in trend every now and then. We had this back when I was a kid and it always was so much work to clean them. And everything you cook in them just tastes odd. It smells odd while cooking, too. Don't know why everyone seems to want that... I tried it again a few years ago because my husband wanted to try one out and still... they become sticky after the first use if you don't put enough force into scubbing them down and after a few days after coating, they start to stink sooo badly. Not a the oil went bad stink, but a metallic stink. I hate that. It is overpowering. And still eveything just tastes odd, like a mix of onion and melon. The taste never went away, I tried so much "tricks"... 200€ right into the trash. I also get that smell and taste in restaurants when they use cast iron pans instead of aluminum pans or coated ones. Even Pizza when it is baked in one tastes bad. How do you all cope with that?

Our family never has that issue. And I mean extended family, too. Most of us cook daily with ours, in all our different households. Nothing sticks, no odd smells or tastes. I'm not sure what would cause it, other than the type of cooking oil, maybe?

You only have to go through this once - and then never have to go through the big clean, as he did, again. It takes me like one minute to clean and after cooking. Another three or four minutes at most to dry, oil, and drain on the stove top. I use mine daily, nothing ever never sticks, and my youngest pan is well over twenty years old. Looks like new.

Cast iron, gives a finish on meats that non stick can't touch. Also one doesn't have to worrry about the finish peeling off and going into the food. I have and use both. High acidic foods like tomatoes are better off in a non stick.

After each cooking, you’ll need to wash it all off, so the oils that you spent hours applying + heating etc would all be gone and needs to be reapplying plus oven heating etc?

@Wix11ven - All the time initially spent, getting that seasoning done... what it does is set it. The seasoning layer stays on. And because it's set, it makes the pan a non-stick surface. After cooking with it, I usually only need to give it a quick rinse, with a small drop of soap, using a sponge. (If something does stick, I use a nylon scrubber or wet scrub daddy, and it comes right off. ) After washing, I set it on the stove top, on medium-high, and make sure it's completely dry (takes only a couple of minutes). Then, I add a whisper-thin layer of oil while the pan is still warm, and I'm done. (It usually is all finished, before I've even put the rest of the dishes in the dishwasher. Seriously, the process takes about five minutes, tops.
