I’ve been asked a lot about how I make my Clear Ice - it not only looks good, but melts slower than regular ice in the cocktails. Although having a big freezer with lots of space to make big ice blocks is great, today I’ll show you how you can make Clear Ice cubes at home by turning any plastic container into your own, homemade cooler - this way you can make great Clear Ice even if you have limited freezer space! I’ll also be showing you how you can carve the ice into any shape you want, using regular tools you might even have at home, so you are getting two Clear Ice hacks in one video. Yes, I started doing my own clear ice with the directional freezing technique. To avoid having „smelly“ ice, I bought a dedicated clear ice freezer. My friends believe I lost my mind at first, until I served them my cocktails with clear ice. Lots of aah and ooh 😅

I use double walled insulated coffee cups - takes up very little space and you get clear cylindrical ice.

Excellent! This is the exact method I use. I have a freezer with drawers with a maximum height of 14cm. I use a tupperware box which can still be used for its intended pupose when not making ice. With such a small clearance, it is important to judge when to take it out, in order to get useful sizes of ice from it.

Cool video! It made me immediately started looking into doing nested cambros with a hole drilled into the top vessel to help separate it from the cloudy ice below. Or a myriad of 2" x 2" x 2" tupperware nestled neatly into a shallow, insulated tray.

I have a few clear ice molds, a couple of small coolers too. I also have some cheap molds that I can position near the top of a cooler and get clear ice roses and little diamonds. Ian obsessed!

Try this: make the insulating box open on the bottom, but closed on top, such that you lower it down over the container. This way, you get directional freezing that rises from the bottom rather than descending from the top. Any air bubbles that get pushed out of the ice rise out of the ice, so you don't get bubble inclusions, which can still be a problem with top-down directional freezing.

This is exactly what I am planning to try with my silicone moulds, leave the bottom uninsulated and the sides and tops insulated to let the gas escape as it freezes.

I bought a small Wintersmiths clear ice cube freezer that makes 3 large ice balls (2.5" dia) and 3 small balls 1" or slightly smaller. Hard to get it to work perfectly, but it is cool to have a large ball in an old fashion or a negroni. I want to experiment with buying some silicone ice cube trays and modifying them to try and freeze in a similar way to your approach. Carving doesn't really appeal to me, but you can make some beautiful pieces of ice that make your cocktails works of art. Thanks for the demonstration!!

I also like to save the scraps for crushed ice with a Lewis bag. I use that lunchbox cooler from Amazon with reverse osmosis water. Great technique!

I started out using a low quality freebie travel coffee mug. Only made two big cubes, but fit and worked well in ~24 hrs. Now I use the small square cooler that amazon sells. Now I only have to do it once every few weeks for what I need at home.

I'm a bit more on the extreme side of clear ice I make glass wear, cubes, other fun stuff with frozen floral and herbs. My blocks are about 20"x 9 x 12 I use a chainsaw and I built my own deep freezer unit that acks just like a clinebell. All my cubes are cut with a meat cutting bandsaw. I use the fusing technique to make my glasses.

When the freezer too full to fit the cooler in, I do this with rectangular margarine container but use 2-3 layers of corrugated cardboard boxes for the insulation.

I've been making my own ice with the red version of the cooler from Amazon. I'm going to experiment with using molds inside the cooler to see if I can make ice for my collins glasses easier.

I started making clear ice using Kevin's build-your-own cooler method. I'm pleased to report that it was exceptionally easy and successful on the first try. Below is an explanation of what I did and may be a useful resource if you're in the US. I used a 6"x12" plastic container from Target ($3), cut R5 insulation board from Home Depot ($8) to fit around the sides and bottom, then wrapped the whole thing in duct tape (free?). I skipped the inner sleeve because the R5 board has a much higher insulation rating than typical foam and the plastic container slides out of the insulation easily.

I'm using double wall stainless tumbler like this! Pour water in, put it in the freezer and let it freeze about half way, so you can get the ice out easily. It produces only one ice chunk at a time, but it is enough for me.😀

I bought the Amazon container, luckily it fits into my freezer. The only downside is that shaping the ice is not easy with kitchen tools, so either I need to get proper tools for it, or some molds which would give me correct size blocks from the get-go.

The Amazon Coleman cooler has been a great tool to make clear ice at home! ~36 hours for the Coleman if you fill to ~1 inch below the rim.

I use a cheap 5 quart cooler with the lid removed. I find 36 hours in my freezer give me the thickness I want. I cut the ice with my oscillating saw, with a blade I only use for ice. To finish off the cubes, I heat up a frying pan and using tongs to hold the cubes I can square them off and polish the sides.

to me, the most annoying part of cloudy ice cubes is that they release the "fridge taste" in the cocktail not sure if it's a common complaint, though

I use an even smaller container: a straight-sided water bottle cut in half, with two beer koozies as insulation. It only produces one ice cylinder though.

I use the Amazon coolers and take the top off. Question- I saw in another video you were resting (or temping up the ice) on a little plate to bring up the temperature before adding to the cocktail. Is that a plate specific for ice? Or just a plate that you like that happens to fit your ice cube? I love that idea of a plate, so that customers can marvel at the gorgeous cube while I make their drink! Cheers

A great tool for sawing ice but still in a compact, easy-to-store form factor is a foldable pruning saw. Works great due to the double set of deep serrated blades, and definitely cheaper than the 'ice saws' that seem to cost a fortune.

I am a home mixologist from Slovakia (obviously not Slovenia), I have been mixing cocktails prehaps since 2015 at home, but I have never been so crafty and culinary in the mixolog ... I use a simple plastic food takeaway container, freeze up a big block of ice and cut away the parts with the bubbles. The ones with bubbles double up as ice for shaking or just ice for soft drinks Granted, nothing beats clear ice from dedicated setup, thanks for the idea =)

So I have a very large cooler that I fill with filtered water and leave outside during the winter, usually I try and make a bunch of clear ice and stock my freezer for the summer. It usually only last me till the begining of summer though

For big ice cubes I use a small cooler but for clear ice spheres I've made my own cooler. I've bought a silicon ice ball mold, drilled a hole in the bottom of each sphere, made a styrofoam box and cut it that the ice mold "sinks" in the middle and since I didn't want my balls xD to have contact with the styrofoam I coated the box (on the inside) with food-grade silicone (labeled as clean room-grade or something like that). It looks junky, probably I've could bought an clear ice ball maker cheaper but... :P

I guess I’m just spoiled bc the stores around me sell clear ice ball molds. They work great and saves me from having to carve ice which is a relief for my girlfriend 😅

Just the work/safety gloves from the hardware shop. Mine was a bit too big for my hands though 😅 Cheers!

Nothing like going through all this work to end up pouring warm liquid onto a cube straight out of the freezer-the ice will immediately crack and ruin the presentation. To avoid this, take out the ice and let it sit before using. Another option is to user a mixer with different ice to chill your drink first before pouring.

I am using plastic container wrapped out with aluminium foil - it takes up less space in the freezer and isolate almost as good as styrofoam.

You’re right. Once you make clear ice, you can’t go back. You also become a critic of bars’ ice. “Nice drink, but the ice sucks.” I make clear cubes, Collins spears, chunks and balls. You should show how to modify silicone ice molds to allow them to make clear ice.

Mostly just for the ideal time for the freezing. Test different times for the first few tries and see what works best.

I use the 25$ cooler you mentioned for my clear ice. Only difference is I let the whole block freeze completely. The cloudy portion I use for crushing in a Lewis bag since.

I have a question, I was wondering if making a cocktail we use ice to chill and dilute the drink, work with pre batches would be possible do not use any type of ice and keep everything chill and make a dilution with pure water? I just imagine a crazy bar without ice but making great cocktail using only water and alcohol!!!

Wouldn’t using Distilled water take care of impurities as well? Not optimal for everyday ice but for specialty aka cocktail ice I would think it could be worth it.

Even with the purest H2O there's still pressure from water molecules realigning and expanding which will make cloudy ice. Directional freezing and the right timing are key. 🧊

Kevin! Place a smalll fishtank pump (4€) at the top of your container and do not insulate bottom part of it. This way the ice will form from bottom to top, pushing all of the impurities to the top and leaving you with a nice and clear block of ice . It's much simpler and cheaper method. It will allow you to create much bigger blocks of ice (depending on the size of your freezer. Cheers! (DM me if you need some details. I've got a lot of experience with clear ice)

logically speaking inverting the process will not change a thing though. you still have the same space, how does it create more? you're adding an extra tool how is it cheaper? etc.

@@CloudianMH you'll obtain significantly more ice because there will be less loss. All of the impurities (mostly air) will be pushed up by ice itself instead of being trapped at the bottom. There is less risk of damaging the tank. Even if you freeze the pump it shouldn't break. It's cheaper because it's more efficient.

My background is ice machines so I can give you a little science in clear ice. Cloudy ice is the result of minerals in ice. Thus if you only use distilled water in a clean freezer you should get clear ice in any ice tray.

I buy “Chicago Classic Cube” at the grocery store for about $3 for a 7lb bag. Much easier.

Its the best way to make ice cubes at home^^ and the clearness is just the cherry on the pie^^ I dont like this icecube forms or plastic bags, and it makes fun to cutt it in your own size^^
