These cupcakes are the best! They taste wonderful and are very easy to make. You don't need a mixer for this recipe.
Recipe yields about 12 cupcakes.
To toast the shredded coconut, spread some on a lined baking sheet and bake until golden brown. You could also put some in a pan with a little sugar and stir over medium heat until golden brown.
