INGREDIENTS:
Sugar - 3/4 Cup (165g) or If you like more sweetness use 1 Cup (220g)
Lemon Zest - 1 1/2 Tablespoons
Eggs (at room temperature) - 2 medium size (96g)
Milk (at room temperature) - 2/3 Cup (160ml)
Lemon Juice (fresh) - 1 1/2 Tablespoons
Vegetable Oil - 1/4 Cup (60ml)
Plain / All purpose Flour - 1 Cup (125g)
Baking Soda - 1/4 teaspoon
Baking Powder - 3/4 teaspoon
Salt - 1/2 teaspoon
Coconut ( Desiccated ) - 1/4 Cup
Coconut ( Shredded ) - 1/4 Cup (OPTIONAL)
MAKES : 6 to 8 Muffins
