Ingredients:
500g of desalted and shredded cod
1 large onion, thinly sliced in half-moons
3 cloves of garlic, sliced
6 whole eggs
2 tablespoons of olive oil
2 bay leaves
Salt and pepper to taste
200g of potato straws
Black olives and parsley for garnish
Preparation:
Sauté the onion and garlic in olive oil with the bay leaves. Remember to remove the bay leaves before finishing.
Add the shredded cod to the sauté and cook until the water dries up.
Incorporate the beaten eggs, mixing until a creamy consistency is achieved.
Add 100g of potato straws, stir well. After turning off the heat, add another 100g of potato to ensure crispiness.
Garnish with black olives and parsley.
