I made a delicious mousse with coffee and chocolate.
aka Coffee Chocolate Mousse Cake.
I made an anglaise sauce with 3 yolks left over from making a biscuit, and made a mousse with coffee and chocolate. It tasted so good.
"Mousse" in French means foam.
It is a cream that is light and soft like foam.
You can taste the softness of ice cream and the chewiness of jelly at the same time, so I think it is suitable for the weather like these days.
And I wrapped the soft mousse with Chocolate Biscuit Joconde.
Also, I refrigerated the remaining mousse and decorated it with Wilton 2D nozzle, and it looked very special.
This cake is easy to make, but it also tastes so good and pretty.

Pate a Biscuit Joconde (Pate a Biscuit Joconde) is a sponge cake batter that is often used to wrap or stick to the bottom or sides of a cake.
It is made with 100% almond powder as a base, not wheat flour, and is usually made by mixing meringue.
Usually, the thickness is about 5mm, and syrup or cream is applied to make it moist.
I used 8mm thickness this time.

20g unsalted butter ( 1 Tbsp + 1 tsp )
● Coffee Chocolate Mousse Cream
3 yolks
15 g sugar ( 1 Tbsp )
60g milk ( 1/4 cup )
80g heavy cream ( 1/4 cup + 1 Tbsp + 1 tsp)
5 ml vanilla ( 1 tsp )
6g Instant Coffee ( 2 Tbsp )
4g powdered gelatin (1/2Tbsp)
20 g water ( 1 Tbsp + 1 tsp )
130g dark chocolate ( 1/2 cup + 1/3 cup )
170g heavy cream ( 3/4 cup )
● Syrup
25 g water ( 1 Tbsp + 2 tsp )
17g sugar ( 1 Tbsp + 1 tsp )
3ml Kahlua or Rum, Chocolate Liqueur
