@@amacluskie If you are making espresso at home and have a grinder like a 270 you can't really even grind for filter well... But even with like a niche or lido that can grind in either range you probably don't want to mess with the grind you have dialed in, and even if you did that there will still be a lot of fines in the machine that can clog filter... Its a pita to switch back and forth. If you are making espresso at home, and don't basically have a second grinder for filter, ect... Its just not practical to switch over so as crazy as it sounds it probably applies to many people with espresso setups as they have invested in different equipment...

My primary coffee machine is an espresso machine. It's a bit of a headache to pull the drip brewer out. I have americano's almost every morning. This definitely applies to some people.

Daaamn... I skimmed off the foam from my Nespresso lungo and it tastes much more vibrant and it isn't just bitter water to keep me awake it is a drink I enjoyed. Much more aroma, I could actually feel nice acidity... Hm, now how to tell this to people who bought this system just because of a ridiculous amount of crema/foam.

Long black is a term that really only exist in NZ and Australia. Americano is espresso diluted with hot water, what is added first isn't really taken into account, but generally it's true that most of the time espresso is poured into hot water to retain the crema.

Hey James Thanks for all your info & tips. I just tried "scooping" my double espresso (a very good Sidamo.) It worked! Clarity. More fruit. The complexity I usually find in filter brews (as brewed by a more expert person!) I usually do stir to disperse the crema, & not sure why I won't scoop all the time, but I probably won't. Something to do with the warm, creamy association I make with the crema maybe?? Come to Melbourne Thanks again :)

We recently changed to a darker roast at our office and my americanos were getting too bitter for my liking, even after we recalibrated the shots from our superautomatic machines. I tried out this hack. So much better. Thank you for the tip!

Crema is the main reason for most people to have a steam coffee maker. We in Italia specifically look for that thick layer of crema and, sometimes even purposefully, scoop out the delicious mixture of crema residue and un-solved sugar sitting at the bottom of the cup with a cucchiaino when we've finished the coffee.

I normally recommend my baristas to remove crema and use hot fresh water, but steam fresh water was a great tip! Thanks

What you have there my friend is a long black... Espresso over hot water.... Where as an Americano is water poured on top of espresso. But I did try dipping the crema off of my long black and it was good but I like the bitter taste of my crema sometimes. Thanks for the tip!

@@tomlock58 Caffè Americano or Americano is a type of coffee drink prepared by diluting an espresso with hot water, giving it a similar strength to, but different flavor from, traditionally brewed coffee. A long black is made by pouring a double-shot of espresso or ristretto over hot water.

If you want more crema use a darker roasted coffee and make sure it's fresh. It will taste like ass but you will get all the crema you want

Better is subjective, I love crema and this is a long black. But James is right....its something different no matter what we call it and also tastes great. My tastes in what im drinking in the morning for coffee change usually by the week.

I need to ask a stupid question, but please bear with me since I'm just now starting to learn about espresso/making espresso: if the crema tastes bad, then why is it a desirable feature when making espresso? James, your videos are a treasure.

There really is no right answer to that, and it really isn't a desirable feature, but a feature none the less. Some people like crema, mostly because of the texture, and it makes your shots look beautiful, but it adds more bitter to the coffee which is generally frowned upon by baristas. It really is up to personal taste.

I like the crema when it mixed partially with the foam when I pour cappuccinos. To me it tastes better, but in all honesty most people I know don't like it and rather me make something like pour over coffee. Not only do they get more coffee that way but the flavor of the coffee is much more balanced throughout the cup.

SO true. I used to drink "non-crema" americanos and have recently swung back to drinking them with the crema. The depth of flavor is different. IMHO one isn't "better" but I am no James Hoffman.

I think having a good layer of crema indicates beans that are approximately fresh, but i will try scooping it off.

1:20 It was guests hack from 00's that you should stir americano without adding sugar and give it couple minutes to "set". This way non water soluble crema oils was simply evaporating.

I should try it, but I could swear the crema is one of the best tasting parts of the Americano, and a key reason why it tastes better than pour over. The last extracted bit seems to be the most bitter part for me.

I can vouch this works, Tested it with the "standard" Americano settings on my super automatic Coffee machine. {Saeco Xelsis} and it does make the Americano taste a bit better. Though i Rather prefer one of the Many other options. Like the "Verlängerter" Which is similar to a Americano setting wise. but it taste even better, without even having to remove the Foam.

How do you differntiate between, americano and Verlängerter? I've seen it used kind of interchangeably by some people, with some even drawing a giant lungo and calling that americano... But the shop I worked at wasn't high quality...

I seem to remember the crema contains the coffee oils, which contain most the coffee's antioxidants. So I'll keep it.

It doesn’t contain the oils, it’s just a foam made of the liquid below and some CO2. (And some suspended pieces of ground coffee)

Key difference between a long black and an Americano is simply that an Americano is espresso added to water, but a long black is water added to espresso. Whether or not that actual changes anything in the final drink, I have no idea. But there is a difference

From what I Googled, what is shown in the video is a "long black" since the espresso is poured into the water, in contrast to an americano which is vice-versa. Is this wrong? I think the americanos I get in the US don't have the crema since the water is usually poured over the espresso.

Crema is part of espresso liquid coming out. So if it sits on already hot expresso, it would look like crema. But I think when pour in water directly, the crema would still exist and may just dissolve and yet yield that bitterness. I think best bet would be to remove and pour to hot water.

Yes its long black, cause regular "americano" aka adding water into coffee is worse than adding coffee into water. You can test it if you want. I did and since then every time I want diluted espresso, I just make long black. Americano frankly tastes awful. Unsurprisingly like watered down coffee.

You can actually taste the bitterness of the crema if you taste the foam that's left of your cappuccino of latte after you've drunk it. Especially the oat milk foam with crema is quite bitter.

Or be annoyingly specific about how much water you want. I always prefer short Americano best but seldom get baristas who understand what I'm asking for: 2 shots and 1 third of water you'd normally use. Oh how I miss it.

Since being locked in a closet as a child with an americano, I have had a terrible perception of them. Well, not really, but the 2 or 3 I have had in countries where a request for filtered coffee produces "Que?" were awful. So when I tire of double espressos, I will try this once.

Depending on your budget there are many Basic Fully automatic Coffee makers. If you have money to splurge, i would say OPT for the Top range from the Consumer Class Saeco Xelsis {Sm76**/SM77**}, Jura, and a few others are good choices

I'm so confused. You (largely) don't recommend removing the crema from espresso, and (from other videos I just watched moments ago) recommend stirring the crema into the shot for a better flavour. But for Americano, you recommend removing the crema entirely as it tastes bad, but don't recommend stirring it in. Please explain?????

He's trying to get you to think about coffee in ideas rather than little rules. Each time he's given advice on crema/espresso he's explained the why. Listen to his reasons for each tip, don't just hear the tips themselves and jot them down as hard and fast laws. He wants to teach us how to think. Not WHAT to think. . . . Give each of his espresso hacks a second listen and this time think about the why behind all three tips, and how they all fit together.

in Italian a noun ending with o is an indicator that it is in the singular masculine form. then the plural masculine would end with i, for example: americani. Female nouns often end with an A, their plural forms then often end with an E. lingua (language) lingue (languages)

The term "americano" might be of italian origin, but it is also part of the language of any country that is accustomed to the object of reference (in this case the beverage). Therefore, in english it will form plural with an -s. In greek (my mother language), it will remain unchanged in plural, as do many foreign loan words introduced in recent years. And so on.

Americano simply means American. If you used it alone as a noun, it refers to a person from America. The drink, in Italian, is a Caffè Americano. In the drink name, Americano isn't a noun and Caffè Americani makes no sense.

I was pointing out that your linguistic argument was dubious. But, it's of note that there's no consensus as to whether "Americano" is of Italian (from caffè americano) or Spanish (from café americano) origin. So, if I apply the same type of plural noun explanation you gave, in Spanish "americano" does, in fact, become "americanos." And words change over time from the original language. For instance, originally, a pyjama had nothing to do with sleep (just loose lightweight pants/trousers with a drawstring for the waist) and the language that it originates from doesn't use an "s" sound to make it plural either.

I put a couple ounces of cold brew in my americano. Makes it smoother. Like milk for someone who never puts milk in coffee.

The underextracted/balanced espresso has greater volume of crema than over extracted. The taste is still not bitter in comparison to over extracted one. Does it mean crema has nothing to do with adding more bitterness?

You are comparing apples to oranges. Yes, extraction is going to play a bigger role in how bitter the coffee is, but that doesn't mean the crema isn't more bitter than the rest of the coffee.

@@DiamondPugs I agree. But this gave me an idea that part of the bitterness is segregated into the form of the crema, hence, the more crema the less bitterness and vice versa.

I do this all the time - hot water from the spout then steam it until it just boils. Makes up for the loss in temp from cold cups too. Make sure you don't re-introduce that 100C water into your shot though, blast a little water from the spout first if you don't have a temp gauge.

For me, the bitterness of the crema works well in a drink with milk or cream. What are other people's experience with this? Is crema removal just for straight coffee drinks?

I would just do it for straight coffee drinks. 1. Crema is necessary for latte art. 2. The natural sweetness of milk or cream goes well with and offsets the bitterness of crema. 3. It's much more difficult to taste the complex notes of a good cup of espresso one you introduce the distinct richness and fullness of milk or cream to a drink.

I do the same thing. Americano, I add half and half, then stir it all together, even sugar. Ironically, my entire introduction to expresso, was acquiring the taste of the crema. For me, its like a high proof bourbon, or a good cigar, all an acquired taste.

Americano is espresso with water on top. Long black is water with espresso on top. Americano destroys the crema and mixes it into the drink, long black leaves in intact on top. Coming from an Aussie/Kiwi ling black drinker.

I’m not an expert but I notice that most cafes I go to serve a rather tasteless, watery Americano with no crema. I don’t think they’re spooning it off, maybe they are but I doubt it as I think most cafes I see aren’t very into the art of coffee and my understanding is that crema is actually rather difficult to achieve in the first place. There’s one Italian restaurant in LA I used to go to that served Lavazza coffee and pretty consistently had crema on their Americano which I thought tasted really good and showed that the barista knew what he was doing. Am I wrong?
