Today we will be making delicious red clover jelly! This video includes the ingredients, recipe and a tutorial on how to make it. We also show you how to can the jelly to preserve it for later use. This is an old recipe that our ancestors used hundreds of years ago. Enjoy!

All this canning reminds me of growing up on the farm. Mom and grandmas constantly canning everything from beef and chicken to jelly and all sorts of vegetables. The best! Thanks for the trips down memory lane.

That has to be good on ice cream for sure or peanut butter. Looks very easy to make.

Picked my red clover blossoms yesterday evening and made the jelly this morning. I ended up with 8 half pints. To me it tasted almost like a tart plum jelly. I will make another batch but i think I will modify and add about 1/2 or about 1/8 cup of lemon juice and I also used 2 boxes of sure jell just because I was afraid it wouldn't jell. Turned out to be a very nice color.

+Stan Brown Hello there! Glad you made the jelly. I’m interested to know why it turned out tart 🤔 Mine has never turned out tart. Mine taste like a sweet nectar with a hint of lemon (if that makes sense). Did you maybe use less sugar? Or did you put the stem and leaves in with the clover buds when the tea was made? I was taught that putting any of the “green stuff” into the tea can make it bitter… I’m glad the color turned out good though:) Let me know how the next batch turns out!

@@CollinsCountry thanks for your reply. It wasn't sour but just a wee bit tart from the juice. I picked my clover and then removed any leaves stems before making the tea. I used 2 boxes of sure jell and made 6 half pints. I had a bit leftover i poured into a small bowl. I don't know what happened but the open bowl made a softer jelly but so far the sealed jars are liquid to a runny jelly consistency. I have even put in fridge but so far nothing changed. Not sure what has gone wrong with the process but it is very tasty and nicely colored.

Will the tea that it makes be as beneficial health wise if kept in the fridge after letting it steep?

Awesome, I never knew you could do that. So does it have a taste comparable to anything, or is it a totally unique flavor?

+The Crafty Crow Show In my opinion, it’s a unique flavor. It taste like sweet nectar with a hint of lemon. The lemon works as a preservative because it’s so acidic, but it also adds that hint of lemon flavor. It’s delicious!!!! :)

I have an abundance of these in my backyard, but I just had two questions. If i were to be just using lemon juice out of a bottle how much do you think i should use? And if i dont have a pot big enough to boil the jars themselves what do you suggest I do instead?

+AmvUnity good questions:) 1.) if making this full recipe I would use 1/4 cup lemon juice. 2.) If you don’t have a big pot to water bath (preserve) it in, you can definitely make it and just eat it fresh. But unless you eat a lot of it everyday, it would spoil before you ate all the jars. So you could maybe make half the recipe and you would most likely eat it in time. I am only guessing, but I bet this would last a month (or longer) if stored in the fridge… But if you want to make it and eat it later it must be boiled in a pot to “can” it. I hope this helps!

I cannot get mine to set I have re-boiled and added more lemon cause my 1st was small and added more pectin. Still not set up. What did I do wrong
