I didn’t know this was possible!! When I was little we just made necklaces out of clover! Thought we were very fancy!! 😀 The jelly is so pretty!

Needed this! Making dandelion, violet, and forsythia! Once our clover comes up, I'll do that too!! I keep pray'n for you and yours; especially the healing of your daughter. I wish I could give something but I can't at this time; the only thing I can do is pray. Blessings to you all! 🥰

My mom would send us kids out into the meadow when she saw that the clover heads were large and fully bloomed. We'd each have an icecream bucket to fill with the largest, juiciest clover blossoms and then she'd make clover jelly. We called it honey because it was so sweet and sticky! She's been gone for 26 years now and I don't know where her recipe has gone, but now that I have found this video, I'm anxious to try it and bring back some childhood memories. 💜 Thanks so much!

My sister-in-law use to make kudzu jelly using the flower. It was some of the best jelly I’ve ever had.

A few hours ago, I was sitting on the patio, I told my husband, looks like I need to mow again. I said look at all that clover popping up! I'm so making this before I mow. I really had no idea you could do this. Thank you 💚

I made the white clover jelly. Earthy tasting but good. I have dandelion tea ready to make dandelion jelly. Can't wait to see how that works. Thanks fir sharing

If it's too warm in my house sometimes it will start to ferment, after it cools I put it in the fridge overnight.

I’m definitely trying this. I have a ton of clover in my yard (but no blossoms yet). I made dandelion honey a few weeks ago for a friend of mine who is vegan.

Had to find the video about the honeysuckle jelly after your video this week where you mention it. I have 3 or 4 honeysuckle bushes in my yard. I was thinking of using for tea or a body product but really like the idea of jelly.

Jelly is only good for 6-8 weeks or so if it is not canned & processed.

Constance, I tried my hand at making the Honeysuckle Jelly recipe you have on your website. I have a few questions. I know you are busy and may even still be in OK so if you don’t get back to me right away, I understand. In the recipe it says to boil the 4 cups of honeysuckle blossoms with 4 cups of water for 20 minutes. I kept having to add more water during the boiling process because it was about to boil away. Also, when the 20 minute was up and I strained the blossoms and the liquid, there was not 4 cups of the “tea” left. I didn’t add anymore water to this, but in hindsight I am thinking I probably should have. When I added the sugar after bringing the tea, pectin and lemon juice to a boil for one minute, there was almost not enough liquid to dissolve the sugar. And when I ladled up the jelly, I only got (4) half pints of jelly. After watching this video on making clover jelly, I am thinking I should have added enough water to make 4 cups with the tea added to it. My jelly tasted very tart and it was pretty think before I processed it in a hot bath. It had a good flavor, so I will try this again. Also, just curious if the honeysuckle jelly could have been made like the clover jelly, by adding boiling water to the blossoms in a jar and letting that sit over night? Thanks for any advice you can give.

I apologize that the recipe wasn't clear. It should be a very gentle boil, not a rolling boil. If the liquid reduced that much, I would definitely have added some water to increase the liquid levels. I think you could potentially do the overnight trick with the honeysuckle just like the clover. I do believe that would work. If I still have honeysuckle out there next week, I will film a video of this recipe, but I may have missed my window of opportunity this year.

Thanks, Constance, for your reply. In looking at some other recipes online, most say boil the blossoms for 2 minutes and steep for 2 hours, rather than boiling for 20 minutes. I know there are different methods for making the jelly, so I will give this a try again next year. Yes, the honeysuckle are about to be finished up. I had to drive about 15 miles from home to find some growing along a fence row that I could get too, without having to worry about waist high grass and snakes! Lol. Also, most other recipes said to use only one package of Sure Jell and your recipe said to use 2 packages. I followed your recipe but I think it could have worked with only 1 package. But, I am chalking this up to a learning experience. I learned something new and now I want to try your clover recipe! Thanks again!

It's really hard to describe, but I would say it has almost a berry-like flavor.
