If you add chinchona as bitter agent, why not leave some citrus pith? Btw , how much of every ingredient you used? Thanks!

I saw people who dried (in oven 100 f ) peels , they said that dried peels get concentrated and release more flavor than fresh .

Yes the dried peels are a good addition. I used dried orange peel and fresh. The fresh is good also since it releases the citrus oils. Thanks for your comment.

1 tbsp dried orange peel 1 teaspoon anise seeds 1 teaspoon grains of paradise 2 tablespoons cinchona bark 1/2 cup dried cherries Zest of two oranges Zest of two lemons Six fresh sage leaves Six fresh basil leaves 3 cups high proof or over proof vodka 1/2 cup simple syrup (this is only added after the above ingredients sit in a cool dark space for 3 weeks) After 3 weeks strain the liquid through cheesecloth to remove the solids. Add the syrup and store in a cool dark place for 2 more weeks.

I have everything but g of paradise, they said pepper+ ginger and lemon makes a substitute, do you agreed? Or are they really key for flavor profile?
