Warm Caramel Apple Cake with Caramel Sauce
1 1/2 cups self-rising flour
2/3 cups white sugar
3/4 cup milk
2 Tablespoons oil
1 teaspoon vanilla
2 cups apples, peeled and diced
1 1/2 cups packed brown sugar
1 teaspoon ground cinnamon
2 cups boiling water
vanilla ice cream
Preheat oven to 350°.
Mix the self-rising flour and white sugar in a medium bowl. Whisk in the milk, oil, and vanilla. Pour into a greased 9-inch square baking dish. Top the batter with the diced apples, very slightly pressing them down into the batter.
Mix together the brown sugar and cinnamon. Spread over the apples. - DO NOT STIR! Gently pour the boiling water over the brown sugar mixture - DO NOT STIR! Bake for 50 to 60 minutes or until just firm and lightly browned. Serve warm with vanilla ice cream.
There will be a layer of caramel sauce at the bottom of the dish that you can spoon over the dessert and ice cream.

I have been making a cake similar to this for the last 60 years. yes 60 !!! in that recipe you heated the brown sugar and cinnamon with the water and brought it to a boil on the stove (of course micro is easier i guess) and poured that over the cake. I noticed that there were spots of cinnamon on the top, that problem would be solved and it would carry some of cinnamon onto to bottom. I have taken my recipe and added peaches with ginger instead and it is wonderful.. I will try your version. sounds wonderful. Thanks 😃

Just finished eating my Caramel Cake. I actually used fresh figs as at the moment they are cheaper than apples at 2euros a kilo , approx a one dollar a pound. I did reduce the sugar in the cake batter to half but still very sweet. We don't use cup measurements here so after trying to work out the weights just went for the proportional measurements, it worked fine. I found the recipe for the cake/batter a bit strange but it worked. Did use plain flour - (no self raising here) with some baking powder. Results was delicious

Good morning Tom & Melissa, We also just love a warm apple cake, there is almost no comparison at the table. Needless to say we just love sweet treats, they are always appreciated. For sure I am going to add your recipe to my other favourite apple cake, I have to add, this is so "American" , I remember buying the American Woman's Day magazine back in the 1960/70's, when it was Autumn there were loads of apple recipes throughout all the States. There was a survey held which is the most favourite - Apple Pie/Chocolate Cake? I will leave the guess work to you to pick the winner!! That was a difficult decision hey?. We love your channel! I made this yesterday and doubled the recipe. Here's my tips on that: Make sure your pan is larger than 9 x 13. Be sure to use really yummy apples (I used blah tasting Gala apples) - it's really gonna make a big difference. In regards to doubling it, I would rather make (2) 8" pans for a crowd because the middle of the 9 x 13 was not as cooked.
