When I see Mohito's reaction, I'm almost inclined to think it was a painful smile. The expression in his eyes seem sorrowful and melancholy. My interpretation is that he is smiling as he is, since he is somberly accepting of his universe's fate and is unable to do anything about it. A sort of smile that you give when you've made peace with the inevitable. (Just my interpretation)

I always thought the smile was because at that moment he was thinking, I knew that was going to happen. He did seem to care, when they were trying to recruit fighters for the TOP, he was shown to be visibly upset at the rioting and chaos occurring on the planet they were on at the time.

It’s possible that the reason the angels didn’t seem to care about the universes getting erased is because they suspected how the tournament would end and that they’d be wished back. The Grand Minister himself knew that Zeno foresaw the tournament’s outcome.

As for future zeno erasing everything except him trunks and mai, in the show we learn that zamasu and goku black kill the supreme kai's which kills the GODS as well, also we learn that when a GOD dies the angel serving them goes out of commission until a new one emerges or is assigned (idk) meaning that we don't know for sure if they were erased or just weren't allowed to get involved. Also after zeno erased trunks future zeno stays in the past for the remainder of the show, which could mean there's nothing to go back to. After all from the universe's that were erased completely we haven't seen or heard any about the angels from those universe's.

Actually the Angels were spared by the Zenos since as you said they have ties to them, they even mentioned that they would be spared in the show but this was before the tournament even began, but most likely if the Zenos didn't care they would've erased the Angels with the rest of their Universe without hesitation

Hmn... More like the Grand Priest knows but the Angels don't. Remember when Whis and Vados talks at the end. That maybe Mortals are capable of change. That can be hinted that Zen-Oh and the Grand Priest might know what will happen in the end but the Angels are still kept in the dark but... They might have connected the dots themselves.

I could be wrong but I think it wasn't confirmed tht all the angels are the grand minister's children. Only Whis and Vados were confirmed which was when Whis calls him his father which also means Vados is his daughter since she's Whis' sister but it wasn't ever stated tht the other angels are the grand minister's children

I think it's just easier to name all the characters after everyday things because coming up with actual new names must get pretty difficult and annoying. I also don't think the angels are up to anything they would get wiped out in seconds by zeno, I mean future zeno took a split second to erase the entire future trunks universe and Goku barely had time to escape, so the second the angels try anything they first have to get passed the guards whom they aren't even strong enough to defeat and zeno would just instantly obliterate all of them and possibly existence

Its noted that Mohito actually hated both his universe but mainly his god of destruction, quite passionately because of the way he treated both his angel, and how he wouldn't hesitate to destroy everything or anything for the littlest of reasons...also he was just overall a jerk.
