Vietnam veteran here. After getting sick of eating army rations, whenever we had an opportunity to purchase sardines, we did. We called them “funky fourteens”. We would eat them by dipping them in a shared jar of mustard. Pretty messy, but, delicious!

I choked on a fish bone as a kid and swore off fish until adulthood. I ate a can of sardines for the first time last week. I proceeded to return to the store and buy multiple of every flavor they had and started eating them before I even got home. Even now my mouth is watering just thinking about them. It's been a week since I went shopping and it's been six days since I had sardines.

Herring and sprats are totally different fish. Herring are larger and chunkier than sprats. Brislings are just smoked sprats. Bumble Bee has some great brisling flavors, and all of King Oscar's flavors are pretty good and affordable. FYI, Bumble Bee used to pack herring, but switched exclusively to sprats last year.

A common thread: oil-packed vs. water-packed tend to have better flavor and texture. Even more so for high-quality oil. A can of good sardines in EVOO makes a great pasta sauce, practically on its own, with maybe the addition of some garlic/black pepper/peperoncini.

I have been loving canned sardines for so long! I take them out, split them in the middle, remove the bones and little guts then pour the oil in a bowl, add some diced onions and a little garlic clove and season - fyi: Old Bay - and let marinate in the fridge. Ooooh!! Baby!! Lol, over some basmati rice or multigrain crackers, or spread on a baguette - it's absolutely delicious! I'd take them over a dessert! Lol! The canned Portuguese ones in spiced oil are my favorite. I haven't delved into other canned fish, glad I found this channel 😊😀.

I'm 74 years old now and I've been eating sardines regularly since I was a little kid (because my dad was a sardine addict) and my favorite regular brands are King Oscar in olive oil and Crown Prince in olive oil, but they're both smoked and the smoke residue aggravates my sinus allergy. So my next favorite choices are Brunswick Sardines in water, Season Sardines in water, and Beachcliff Sardines in water. I dump the can in a bowl and I drink the water (because it has some omega 3 oil in it), and I add a tablespoon of half and half sesame oil and smoked sesame oil and I chop up the sardines small to make sardine salad. The sesame oil transforms the el-cheapo sardines into a delicacy.

I may have to try the sesame oil trick. We've got a bottle of it and we don't use it for cooking nearly enough.

@@CannedFishFiles ~ Hey Matthew, I like to mix the sesame oil equal amount with toasted sesame oil and use it that way. The straight sesame oil is a bit too bland for my liking (except for sauteing meats) and the straight toasted sesame oil has a bit too much of a toasty flavor for my liking, but mixing them half and half is ideal. I buy both oils from Vitacost.

@@CannedFishFiles ~ Hey Matthew, Here's something else I think you might like. This is a recipe I learned about when I was a teenager and I'm 74 years old now. It's a peanut butter, sardine, onions, and mustard sandwich. I know it sounds crazy but it's superb (in my opinion). If you think about it, the orientals have been using peanuts and mustard with fish and chicken recipes for thousands of years. The Chinese call those recipes 'Kung Pao" recipes. Here's the way I do it: I dump a can of sardines in water into a bowl and I drink the water. Then I let it sit for few minutes and I drink the last drops of the water. Then I spread the sardines out on a plate and let them air dry for a couple of hours. Then I butter one piece of whole wheat bread with a generous amount of Smucker's Creamy Peanut Butter and I set it on another plate. Then I dump a big handful of chopped onions onto the peanut butter and I kind of tamp them into the peanut butter. Then I carefully place the sardines onto the top of that, then I squirt a fair amount of mustard on top of the sardines. Then I put another slice of whole wheat bread on top. No salt is needed because the peanut butter is quite salty, and so are the sardines and the mustard. I love those sandwiches. That's one of my most favorite sandwiches in the whole world. If you try it please email me and tell me your opinion about it. My email address is jim.yost911@gmail.com

@@jimyost2585 That sounds pretty good Jim! I mean, if you've been eating them for decades... I'll try to give it a shot. Don't worry, I'll let you know what I think. I think once onions are involved you can start to really mix stuff up, they're a magic ingredient.
