Many people saying the goose is not cooked enough is wrong. The goose is already cooked, it is good to see a little pink on the meat. The reason why the goose looks tough and chewy is because it is an old goose. The best goose is below 60 days, best at 50 days old, called gosling. Anything above that and the goose starts flying, which toughens the meat especially the breast.

@@hisexcellency916 although duck and goose are classified as poultry, they are not common carriers of salmonella. Even for chicken, 165f is just a safe guideline as it is time based. Refer to the time based chart provided by USDA. As an example, look at all the duck dishes cooled by Gordon Ramsay, they are all still pink. The meat certainly is no more than 135-145f, at 165 they will turn grey.

@@mamaming8447 thats what Im sayin. Cook a damn duck to 165 and it will dry. Cook a whole chicken to 165 and the breasts will be like the sahara.

@markwinston3119 I cook chicken fully, but I also usually make stew. Duck, I usually roast it, so a little pink. Don't be mad. People forget that other cultures do things differently.
