Just a tip: if you toss your blueberries in just a little bit of flour before adding them to the mix they won’t sink in the muffin tins during baking! 💕

I think teaching us how to do a food storage on a budget... and for different areas... so example, TX, sooo hot, no basements as you know... so I try to keep some stuff in a garage storage but am finding this heat is killing even things that should last. 😬

We live in Northern NM so have extremes in temps. I resorted to taking over the guest closet with shelves and put my food items in there while keeping non-food items in the garage. If you don’t have a guest closet, try adding shelves to master closet or laundry room to increase space.

I’m in California and we have an extra fridge in the laundry room we use as a pantry, we put nuts, rice, flour literally all the big bulk bag dry goods, that’s the only way they last!

Extreme temps here in AZ too. So hard to figure out where to store food. Also, I am new to food storage, so still working on space for thing. I did get some long bins for under my kids' beds. That is super helpful! I would love any advice!!

If you toss your blueberries in a tbsp of flour before adding them to your batter they will not sink.

Actually the flour trick is for frozen blueberries and its to stop the bleeding of the blueberries in your batter.

I would really like to see a “food storage on a budget” video and I would like to know how to store things like sugar, flour, and rice without using Mylar bags and oxygen absorbers. Absolutely love love love your videos always. Much love to you and your family ❤️❤️❤️❤️❤️❤️

My degree is food science and nutrition, and I'm so grateful my college enforced food science the way they did. So, in baked goods fat, sugar, and protein all contribute to a product. Fat obviously provides flavor, but too much or too little will result in gummy or rough baked goods. Also coloring is from fat! Was the white muffin the one that required a sugar streusel? If so, that might be why it's recommend. Sugar provides flavor, but most don't know it is responsible for hydration/moisture. So the muffin that was crumby I'd be curious to see the sugar and fat content in comparison to the others. Last protein (eggs and flour) provide structure, but also can effect rise and fall of baked goods in their centers. It's possible you over mixed the protein when combining the ingredients. Hope this helps. It's hard to explain it all shortly without going overboard and not in person. 😁

Really like how your testing crew really talks about what they are tasting and why they like it. Things like this has more butter in it, I like the crunch. sort of like cornbread. They were taking it seriously, comparing and then going back and checking their memory.

The sinking may have been caused by too much time between batter prep and the oven since you were a) doing 4 at once and b) filming doing 4 at once lol. Quick bread batters (and cake and muffin batters) get their rise from the baking powder or baking soda, but once all of that has reacted, there's nothing left to give rise and they could sink a bit in the oven. Just my guess, as both a baker and a chemist!

this is so fun! I have 2 tricks for your next batch, either toss the berries in a little flour or hand stick into the muffin pan once the batter is poured. This will help in reducing their sinking to the bottom and messing up the structure. Now I want a muffin... lol!

To prevent berry sinkage lightly coat the berries in flour before adding to to the batter.

I was concerned with the fact that you made all of the recipes and some sat for longer. I’ve always been under the impression that when you use leveners, you want to bake them ASAP or you risk them not working. True or false? 😩

I thought the same thing. The chemical reaction starts happening immediately. They will bake differently after sitting for a while.

Yeah first thing I thought too. The ones that worked were the ones what were full of air from creaming the butter and sugar.

Yes. When you let them sit they start to rise. Then when you mix in the berries it stirs out all the rise. Best to do it all at once.

I like the food storage idea. I do kind of a food storage but then again I don’t have a large family. Just my husband and I. I still like to have backups and stock up on items. I really liked this video with your family! ❤️

You did change your baking powder partway through. Older baking powder can have a vastly different effect on the muffin, compared to the muffins made with fresh baking powdwr

We made your BlackBerry muffins today (omitted the apple pie spice and add a pinch of cinnamon - we did a batch of blueberry and a batch of choc chip)...they passed my kids' taste test with flying colors! (Even with oatmeal in them!) Thanks for the recipe!!

Love your enthusiasm and the comparison theme! Found this video while looking for videos on the suggested cooking time for muffins, and I think 27 minutes at 375f makes the most sense.

I absolutely loved this video! I love the opinions your kids gave. They were so truthful. Just loved it! My family loves the "To Die For Muffins", but they definitely need the topping. I've done them without tolhe topping and don't care for them that way. I can't wait to try the Ina muffins. Thank you so much for the wonderful reviews.

I can't believe how grown up your kids are! Haley is almost as tall as Dave these days lol. I totally get your decision to make just the muffins to compare but I simply am not capable of seeing a recipe for strusel & not adding it. The topping is my weakness & I always make double 🙃

The All-recipe one really needs the crumb topping. Also, I find that when baking powder goes bad you have flat baked goods. That was a huge container of baking powder!

I just bought some Lustroware Smart Lock containers like those from the Container Store. There are 4 sizes from prices $11.99 - $18.99 and I bought 2 of the 16.91qt and 2 of the 8.45qt and there are two other sizes in between 10.57qt and 13.21qt. You can buy them online but since I have a local store here in Las Vegas I went to the store and picked mine up last week.

Your family gives good notes and critique in their tasting. It’s interesting that it isn’t that easy to make a good blueberry muffin. I think adding such a juicy ingredient would be trickier than adding raisins or nuts. In fact, now that I think about it, it’s been years since I made them and I think there was a reason why. Pumpkin with chocolate chips and nuts, there is a good combo.

I'm taking a crack at Sugar Spun Run's recipe for blueberry muffins tonight. Hubby has made her vanilla cake, white cake and chocolate cake, and they've all been absolutely incredible! So sweet and moist! My Dad isn't a fan of chocolate cake because it's often dry and even he was a fan!

I toss my blueberries in a bit of cornstarch - NOT FLOUR - and they float all throughout the batter. Ina Garden’s are good. There are other ones that are good. I love the idea of teaching food storage! I have 6 months and really need to up it to a full year. It’s been a lifesaver as our area has not lifted restrictions at all.

My favorite way to make blueberry muffins is with a cake mix and frozen blueberries. I wiz up about 1 cup of frozen berries in the ninja blender with a couple tablespoons of AP flour to get crumbly berry pieces. I make the batter according to the box and stir in the blueberries. We like cake-style muffins around here though.

Just a helpful hint. After you wash the berries, any berries you want to add into a cake or bread or muffin, dry them and then dust them with flour. It helps to suspend the berries in the batter instead of allowing them to fall to the bottom

I love your banana bread recipe and have had great success with it as a banana muffin recipe AND an AMAZING blueberry muffin recipe! Seriously SO GOOD! (I just switch out the bananas for blueberries. Fresh or frozen work!) 😋❤️

Muffin batter can't sit out. Next time make 1 at a time. That should help with consistency!

I agree. Baking powder could have been a factor depending on how old it is and if it's because you were near the end of the container. Also, baking four batches at one time although separate could be maybe your oven was struggling to keep the right temp? I'm not sure for real but I feel your pain. Nothing worse than hopeful baking and it doesn't work out.

I watched Ina Garten's video for the recipe, and she refrigerated hers overnight before baking. I was actually a bit surprised because I've never waited to bake a batter like this before.

I was always taught that you start with your dry ingredients and in a separate container you make your wet ingredients but you never beat them you stir them into your batter

If you want to up the taste factor on a muffin, melt some butter in a skillet, cut the muffins in half top to bottom and brown the cut side. Delicious!

My family is still quarantining(our choice until numbers come down) so I don’t get out ever so you’re like my new friend I just met in February. I like your talking and shenanigans, like trying to cook several recipes of the same thing all at once, with humor yet being serious! I like when you cook from scratch and show how easy it is to do something(bread, biscuits, etc) Food storage would be great. I would also like for you to talk about strategy for shopping and stocking up in these times, for instance tomato sauce, diced tomatoes, salsa, canned beans, rice, flour, wipes(raspberries, who knew raspberries were selling out week to week), one delivery you get it the next you don’t. Friends and family tell me that in stores it’s the same for our area. Things you could rely on being in stock each week are all sold out. If you choose or need to shop online, how do you organize your online shopping. Also like the fitness videos and the dollar tree challenges.

I have been making the Jordan Marsh for years. I'm not sure what went wrong. I do make mine in ramekins not muffin tin. They come out very large and fluffy.

I wish I would've commented sooner!!!! I love your videos but my personal fave blueberry muffin recipe with out any extra topping is from yummly. Its called classic blueberry muffin recipe is by crisco!

I loved the video. I just wanted to comment that I make the “To die for blueberry muffins” for my family and they love them! They do, however, need the streusel topping.

I use that recipe too. I like sprinkling honey granules on them instead of the streusel topping

The recipe was probably designed with a sweet topping in mind. You wouldn't want a ridiculously sweet muffin when you're going to add even more sugar on top (unless you want the sugar overload).

Your blackberry muffin recipe you make, swap out the blackberry for blueberries and you have a great blueberry recipe 😊

Always toss the blueberries in flour it helps they stay evenly through out the batter they won’t fall to the bottom!

Weirdly enough my fav muffin recipe I've done so far is actually a mug muffin recipe that I tripled to make a small batch in the oven. I liked the recipe a lot because it's very pale, light, and fluffy, and I used chocolate chips but you can add whatever flavors you want because it's a plain, eggless recipe but I loved how simple and sweet they were.

@@alwayslearning9272 Sure, I got it from one of those videos with mug recipes so it's meant to be a single mug muffin, and it's good that way too as well as tripling the recipe to bake in the oven, but that is why the measurements are so small: 4 tbsp flour 2 tbsp granulated sugar 1/8 tsp baking powder (a ½ of a ¼ tsp) 1/16 tsp baking soda (a ¼ of a ¼ tsp) 3 tbsp milk 1 tbsp vegetable oil 10 fresh blueberries (or chocolate chips, or whatever you want for flavor)
