This is the first of our series of our cooking 10 one but now on a budget. I’m gonna be taking you to the grocery store grabbing exactly what we need and breaking down how much it cost to make a meal. This was only $55 for our family at 10 so if you are smaller family this meal only cost you about $26.
I’m trying to challenge myself to make sure that I am conscious of the things that I’m buying, how much I’m buying, and how much are meals cost. I’m super excited about this new series and next up is going to be Joshua’s famous pizza casserole on a budget.
Here is the recipe for the homemade scalloped potatoes and ham with a beautiful salad:
Ingredients:
One onion, sliced thin
One stick of butter
Combine both in a sauce pan and let that cook on low while you start the roux.
Roux Ingredients:
One stick of butter
One cup of flour
1/2 tablespoon of salt
1/2 tablespoon of pepper
1 tablespoon of ground mustard
2 tablespoons of garlic
2 to 4 cups of heavy cream
1 to 2 cups of shredded italian cheese mixture 
To your one stick of melted butter add the salt and all of your spices
Whisk together until it forms a paste and let it bubble for about 2 to 3 minutes
Slowly add the whipping cream, next the shredded cheese mixture.
Additional Ingredients:
4 cups of carrots, chopped small
One bag of sliced yellow potatoes,
About one to 2 pounds of ham cut into chunks
Start by chopping the carrots, slicing the potatoes, and cutting your ham into chunks.
Next layer, the Scalloped potatoes first with some sauce on the bottom
Then potatoes, ham, carrots, and onions.
Repeat those layers, ending with sauce and sprinkling with Italian cheese mixture.
Bake at 375 for around 1 hour

Hello, I am in my mid 50s, and the last of 14 children. Long before the warehouse stores where we lived, I remember going with my mom to the wonder bread store. She would pull in the truck bay with old station wagon, and the entire back with seats folded down would be full. Also mom with all of us would mix powered milk with half a gallon of regular milk to stretch it out. LONG LIVE BIG FAMILIES and what they go through. I know some people might think 55.00 is a lot to spend on 1 meal but for 10 people that’s really cheap. I can’t even imagine going out to eat even at a fast food restaurant for 10 people. You can just see the love when you’re cooking for your family.

And even if it’s $55 in a smaller family, that’d be a couple suppers and maybe lunches. When I make scalloped potatoes I make a big batch and we just reheat with other meals for a few days

I have never seen anyone use scalloped potatoes for a main dish but with the added ham and a salad on the side I think it turned out great. Kind of like a potato casserole.

$55.00 is incredible for feeding. 10people!!! Well done! I come from a family of 7! Hands to the heavens my mother could take$1.00 and turn it into $5.00. She taught us how to to cook by example and participation. Plus I cooked in a healthy way. Dessert was once a week. She canned lot of foods. Still can marmalade, jams and peaches! Wonderful memories. Wish I was there to help😊

I grew up in a family of 10 as well. My Mom made scallopped potatoes and ham as well. She would put in lima beans as well, but with lima beans they're like a love it/hate it type of vegetable with some people. I loved them in it. It was the first meal I ever made for my future husband. I didn't know it at the time but he hated lima beans. He ate them anyway. ❤

I like challenging myself how cheap I can make a meal. It’s not always possible but I try. My son bought a 100 pack of rubber duckies and takes one with him every time we go to town. If he sees a kid having a bad day or an older person he thinks is lonely he gives it out. No clue where he got this idea but it’s his thing🤷‍♀️

As far as I know, that may have started in Toledo OH. A woman there started handing out rubber ducks to compliment people (e.g. "Nice Jeep!") even when they weren't there to receive them (she wrote on them with a Sharpie and left them) -- then later, when she thought someone might be having a bad day she would hand them out. (Source: Toledo newspaper, known as the Toledo Blade.)

I think we need more budget friendly meals for younger parents who haven’t had to learn to be frugal. I mean, that’s just part of being young , you have to learn , we all were there once. I think many even a little older who have a family need it because times are hard! I tell ya what, I’m mid 50s and remmber having $50/week and $10 was for diapers. Thank goodness for a whole ham and bags of potatoes. Baked ham dinner, sandwiches, scalloped potatoes with ham in it, pot of soup or beans with the bone. Yeah, that went a long way! Goodness…

I use to just use regular milk for the scallop potato n ham dish I made. It’s cheaper , maybe adjust the amount of flour/butter. I tell ya, a whole big ole ham went all week long and created many meals for me. Was sure a saving grace.

I try to stay at $20.00 for each meal with our tight budget. It's interesting when you don't follow a budget you don't realize how many good meal ideas there are for less. This meal looks great.

Love potatoes! 🤩 I have two running lists. I usually write down when we're almost out of something and then if I'm seeing we're going to be over budget when it's time to shop, I'll move anything not essential to my "future list". That way I have it on my radar, but don't buy what I don't need right now 😊 I used to not do that and spend too much 😂 And I don't think I've ever seen an onion that big 😮😄

Wow! This was an exceptional meal for the price ..healthy and 'down home' kind of cooking. 🙂 Love the wide sliced potatoes and info on the roux. Always so interesting to see someone make something you make all the time. I do mine so different I make a white sauce (rue) and just add potatoes sliced onions and ham chunks ( I buy a lot of ham when they are on sale, chop it all up and freeze it in portions I need to make my scalloped potatoes and ham, I also chunk my potatoes, they get less mushy) with salt and pepper. I just mix it all together and then throw it in the crockpot or pan, cook and Serve with warm homemade bread or buns. MOst of the time I throw it all in a crockpot and let it cook until it is done. Salad or a veggie on the side. I don't warm the house up with the oven by using a crockpot. Blessings

I often buy fresh Spinach instead of Salad Greens. I only cook for one person so have to be careful of waste. * Spinach offers more vitamins, and minerals. * Versatile - it can be eaten as a salad, in a sandwich, added to Stirfries, Soups. * Freezes well I cook it first. * Chopping the leaves adds bulk to a salad stretching it further when feeding a crowd. * Often priced less than or around the same as lettuces. You are so right the price of the Butter, Garlic, Flour, Potatoes even Carrots, Salad Dressings will be reduced as you will not be using all of them in this one meal. Thus bringing down the price per person. GREAT JOB

Try sauerkraut, sliced polish sausage, little onion, sliced apple, brown sugar dash garlic, Salt and pepper. I eyeball it....bake at350 for about 30 to 40 minutes. I do not drain sauerkraut. Bake till golden brown. House WILK smell great.

Half ham on sale is $2 a lb now (12-2023) in Wi. Potatoes (10 lb) $5. Add 2 bags frozen veggies, rolls. I came up with $35 for ten people- all ingredients included. Buy on sale and freeze. Make whats on sale

Hey, I live in NS Canada and that small grocery haul would have been way over $100 here. Prices here keep going up and up and now with more carbon tax, they will be going up even more. I make scallop potatoes with ham, onion, garlic, milk and thickener like flour or cornstarch. Cream here is over like $6.96, Potatoes almost 10 dollars for a 10 lb bag. The 5 lbs are even more. Garlic in a jar is $5. The ham would have been a least $12. The produce that you purchased would have been close to $50 or more. It's crazy here.

This meal looks so good!! The only thing I would suggest is to not buy the “lettuce” in the box. Buy a couple of different heads of lettuce (iceberg, green leaf, romaine, arugula, etc.) Not only does it taste fresher, but it will go so much farther, especially if you store it correctly.

Cooking the potatoes uncovered the first 20 min forms up the cheese on top to cover it My scallop potatoes are always 1 hr to 1 1/2 I love combining everything together Do you ever make pot roasts, my absolute favourite roast. I just put carrots & onions & garlic I prefer mashed potatoes with it and peas or your veggies of choice on side. Your house smells wonderful as it slow cooks for hours

My mom made potaoes like that but used cream of mushroom soup, and pork chops instead of the cheese sauce and ham. Also peas or broccoli florrets instead of carrots. I made this for my family to this day and my babies are in their 20s and 30s now.

Amazing recipe, love your videos! Just one note: when you put the list of ingredients on the screen make sure you differentiate the tablespoon from the teaspoon because it was a little confusing, also there is a big known technique for chopping or using a knife and it is curling your fingers while holding whatever your chopping so you don’t hurt yourself, other than that it was very refreshing to see a new take on a familiar dish… I’ll make it for sure Thanks!!

We have a cheap little dry erase board on our fridge to add items that were running low on. That way when it's time to get groceries we won't forget anything we're running low on. I'll check flyers to see if there's any place that's got the best deals or if there are items on sale we may not have had in a while to add on. Love scalloped potatoes. We always made ours with a can on condensed cream of mushroom soup and some canned evaporated milk. I love the thought of the homemade bechemel sauce which I could always Sautee up some mushrooms to add to the sauce.
