Hey Heather! those cookies cooked differently because the pan is a dark metal vs the light colored ones you’ve previously had, the dark metal can absorb and distribute heat more quickly and that’s why often times recipes will have you adjust your oven temp wether using a dark/aluminum/ glass or nonstick pan

You over pulse your flour and butter butter should stay pea sighs and you rest in freezer or fridge in plastic wrap 30min then be quick when rolling out

Nice and practical idea although I would rather use a cheap tablecloth instead. There's no need to waste so much foil. Just pop the tablecloth in the washing machine once you're done and you're good to go
