I live in the Pacific northwest, smoked a lot of salmon and steelhead, use alder it's the best for smoking samanoid' s. Also cold smoke, keep temp 150 F. or less and brine or for a couple of days.

Cob with garlic, lemon, apricote jam, parsley and some dill is also amazing on the BRAAI!!!!!!! In Zuid-Afrika deden wij altijd een zoutwater snoek braai. Best thing ever.

I usually go around 54-57c for salmon on the bbq, but yours at 45c looked good!

Tip for you when dealing with whole salmon. When you open the belly, right along the backbone is a dark strip that should be scraped out with a knife because it doesn't have a good flavor. I was always told it was the equivalent of a kidney. Thanks for sharing.

Excellent video! Have you tried "cold smoking'? I cure the salmon for 24 hours under a crust of salt and sugar then I use a cold smoker with very fine wood dust (beech is great) for about 18 hours. Make sure the temp never exceeds 20-25 C. I use ice water in a pan above the heat deflectors in the lowest position in the KJ2 Classic.....

Texture was the thing i didn't like about salmon, but once i had tuna a couple times, its basically the same texture different but good taste. Recommend eating tuna first.
