Hey, don't be lookin' at me while you cut up those tomatoes with that big, huge knife! You really take on some labor-intensive dinners for your family but you do it with such ease, it makes almost believe I could do it, too! I'm Mexican n I have never seen this done we only use cocoa powder.. for mole enchiladas are meant to be semi sweet but to each it's own ....looks amazing

When I make mine I don't use red sauce I put it on the side. I use olive oil and oil my dish.

The authentic Mexican way of making enchiladas is to dip the corn tortillas in hot oil both sides then dip it in the chilie then put your chicken, cheese,& onion.

No authentic needed in her own kitchen. Healthier and still taste amazing without all the grease. Mexican friend of mine took me for authentic Mexican. I didn't not prefer it. I actually prefer my own twist on a lot of foods. I can make it taste like I want. One thing about a good cook, we gonna take every type of dish and make it our own and tastes bomb. This looks wonderful, nothing more nothing less.❤
