Preparing Savannah Red Rice
2-3 cups of Mahatma® long grain rice
14.5 oz can Hunt’s® whole tomatoes
2-3 tablespoons Hunt’s® tomato paste
3-4 strips bacon (cut up)
2 links smoked sausage (diced)
1 large onion (diced)
1 bell pepper (diced) finely
Salt, pepper, and Accent® to taste
1/4 cup of canola oil (used to sauté’ vegetables)
4 tablespoon of margarine
¼ cup of water

What a spacious and beautiful kitchen. I tried to make red rice and every time it was very sticky and soft. I got discouraged and i never tried again. My grand aunts who have passed on cooked it with ease. My mother's sister makes the best red rice i have ever tasted. After watching your video im going to try until i get it right. Thank u so much .

I seen it made so many times by my mom and Grandpa, I hit the nail on the head with in a year of making it myself. This was always made at least once a week growing up in Savannah. Here in Atlanta, hardly anybody know about Red Rice. You'll find red beans and rice on 50 menu's all over ATL. Maybe 2 or 3 got the red Rice. When somebody tell me they from the coast, that's the first thing I ask them, "What you know about that red rice"😂😂

We are creole and from Louisiana. We also make red rice. We call it jambalaya give or take a few ingredients. Great video! Thanks for sharing💖

david ellis... Gechee, gechee, gechee. Savannah, and South Carolina, are kissing cousins, the majority of slaves, came from East Africa. Red rice, is similar to Jollof. I'm from Savannah.

We make this in Charleston SC. We just call it red rice. It’s part of our Gullah Geechie cuisine lol. Definitely a staple. Took me quite a few times to get it right. It always came out sticky but I’m good now lol

Fry bacon, remove bacon, in bacon grease sauté onions, green pepper, celery, ad tomato paste and water, simmer, add to rice water and let cook

In a separate bowl mix mashed whole tomatoes and a spoon of tomato paste. Add to the pot. Add your rice and stir. Let boil a bit covered. Add a spoon of the sausage water as needed. Stir. Repeat until rice is done. Add sausage last.

Iam from new york, both parents are from north carolina but my mothers father is from south carolina ,you can say i was raised in the south also, all of my relatives down there use to cook red rice I remember it being so delicious, my mother use to cook it sometimes here in new york .ima gonna try to cook it this weekend, thank you

It was always made in a pot or Skillet in my family. Never went in the oven. Same pan too, start with the veggies, then the meat, then rice and what ever fluids your using(water, V8 or canned tomatoes, or a mix of the 3) simmer for 25to30 minutes and it's done. I use V8 juice, a cup of water, half a bottle of Tabasco, and sometimes chopped or stewed tomatoes. The good thing is, you can tweak the recipe each time and make something a little different but the same.

My mom made this but I remember it was a little bit different. She cooked the bacon like it was going in a BLT and crumbled it up at the very end. In Charleston a person could buy it cold at Piggly Wiggly in the deli department. Great video.

With all do respect Mexican rice is not sticky... each and every grain is separate. Number 1 reason is you don't ever stear it... once you ad the water. Leave your lid on and only ad water if needed but don't ever stear , Immediately put lead back on. Thanks and I definitely will be trying your recipe. God-bless and have a great day.

Walmart in the South. When you go further up north, theu don't sell it. I live in NY (family is from Chatleston). We've ALWAYS had to bring Roger home from there.

It shouldnt be unbelievable. One of the first slave ships arrived in Savannah. The last slave sale was in Savannah. Our culture is deeply embedded in African roots.

My mom unfortunately precooked her rice, did not add tomatoes to the pot after the meat and vegetables were cooked, poured the precooked rice in and added tomato paste. The grains are fat and sticking together. She refused to follow instructions because she said everyone cook their red rice differently but obviously there's only one way to properly cook red rice.

"Real Cooks don't measure". Well she got part of that right. Cooks prepare Food, Chefs Create Food!!! I'd say she's a Chef in that that's not prepared food. Cooks measure because they are basically copiers. Chefs just know what they doing. Remember the Golden Rule when Not measuring first: Less is best, you can always add a bit more, you can't take it back out once you added to much. I've Seen Red Rice made every which way possible. From folks with money Adding to much other stuff(to many onions, veggies, shrimp) too folks on a shoestring budget stretching it with minute rice, Kidney beans and cheap canned Spaghetti sauce they got from the food bank. I've had red beans and rice at Least 800 to 1000 times in my life. When you think about it, you can feed a family of four easy for under $20 even today. We typically use one of 3 recipes in my family. All are super easy to make, and don't take along time to make. While being fairly cheap. 1.Chopped carrots, bell peppers, onions, garlic, (jalapenos, celery optional) 2.White rice( minute rice if time is a issue, it will taste different too) 3. Can of V8 juice ( flavored optional) 4. Ground beef(70/30 when on a budget) 5. Chopped Smoked Sausage( bacon optional) 6. Small bottle of Tabasco optional 7. Can of Stewed tomatoes optional 8. Smallest can of tomato paste optional Start by cooking the sausage in a large skillet, once good and brown( not black) add the peppers and carrots. Then sweat the veggies for a five or so minutes (onions and garlic last) Then add your 80/20 ground beef( if using 70/30 brown first and separate that fat) Cook till all the moisture has left the meat and veggies. I typically cook on high to soften the carrots faster Then add rice, V8, Tabasco, and stewed tomatoes, and some water. This is where the chef part comes in. Some water is needed, can't really say how much. I'd have to see what it looks like in the "Large Skillet" and decide. If you got the room, start with half a cup. At least be able to just cover most of the rice. Keep the heat around medium to high and keep it stirred. Sometimes I add a small bit of Pepper vinegar for a extra bite. If your using minute rice your cook time will be shorter. But as the water evaporates check rice. It will tell you when it's close to being done. You may or may not need to add more water. Just before you deem it ready, add some butter and black pepper. In my family we always treated red rice like a meal. That night you ate red Rice made something like above and rolls, biscuits, or corn bread and that was it. But it was always full of meat and fresh veggies. We always had it at least once a week if not twice with the left overs. Like I said, I've seen it made every way possible. But I never seen it done wrong by someone from south Georgia or South Carolina. Even when made with spaghetti sauce, minute rice, and red beans. It still came out Good and was made by a woman from Savannah!!!! Sadly it's not really known here in Atlanta. Only those from North Florida to south Carolina know about red Rice. I can't find it on many restaurant menu's here, and I have had "Shitty" red rice north of Atlanta made by people from Ohio of all places. I told the owner's they needed to watch a few KZfaq videos on how to make proper Low Country Red Rice!!!! Hopefully they saw this video, cause that looked Good👍👍

When cooking red rice you’re supposed to use parboiled rice any other rice won’t do because the rice will be sticky and parboiled rice does not stick together like regular long grain rice.

In Louisiana it's called jambalaya. We were taught by our grandparents that their grandparents originally learns how to make it in Africa.

No. You dont add water on the rice put it in the pot as is. Dry. The less water involved the better the rice

She didn't rinse her rice but most of the rice we get in America is laden with arsenic so I'm gonna rinse my rice like I was advised and I will see how it turns out.

You got to remember that Indian people don't eat certain meats! do you just demonstrate how to cook something or do you let them get hands on? I taught cooking at home for years I am a cookbook offer and food critic I have a PhD and food sciences and I would like to start my home cooking class again. However, everybody gets in on making the food one person I will teach to dice and they can dice the onions and peppers another person can slice the sausage and it's a hands-on experience. They enjoy the food much more and they can take home what they've made.

The coating on rice is where the vitamins are. Rinse the rice and you rinse away the health benefits.

Maybe so but you don't know where that rice has been, how many feet walked on it, if it was dropped and taken back up. Caribbean people wash their rice no matter what, it supposed to be packaged by machine but things do happen, I live in Barbados and we wash our rice. She talked about rice being sticky but it also depends on the type of rice you have, a rice for risotto has to be sticky, it's a short grained rice. I find that if you wash rice ahead of when you want it, we most cook ours with some sort of peas or beans and a piece of salted meat. While the meat and peas are cooking wash the rice, leave a little water on it, throw it off when you're ready to put it in the pot, the grains come out separate. That's just my way sometimes another friend mostly cooks her rice on the oven.
