Welcome to Chi Chi's kitchen: A fun-loving exploration of cooking with an African influence, using whatever I can find in my cupboard.
In this clip I will show you how to make Jollof rice. One of the most loved recipes and national dishes of Nigeria. If you have never had Nigerian food, here is a simple introduction into the world of Nigerian food. Enjoy.

This was sooooooooooooooooo helpful. I'm 9 months pregnant & I was craving some Jollof Rice. It was my first time making it, so my boyfriend & I really enjoyed it. He's Haitian, so it was something new for him. Instead of the mixed veggies, I just added fresh carrots and black eyed peas. GOOD DISH!

Thank you Chi Chi! I just tried this rice. My husband is Ghanian and I am Caribbean and I needed to understand the concept of making this rice a little more and what I found out that I was doing wrong from watching this video is that I was not letting the stew cook down to a almost paste like consistancy. Much better now. Thanks again.

By the way, I tried this recipe today and turned out great. This is the first time my Jollof rice didn't burn. Before this recipe, I frequently would add tomato sauce or tomato paste and the jollof rice would always burn but now I'm soooo excited because I made jollof rice and it didn't burn. Thank you again Chi Chi for the recipe.

i love this rice, i made it exactly like you say, see ive watched sooo many jollof rice recipes you are the only one who did it step by step, not many ppl use measurements which i dont understand how you expect someone to make the rice without measurements, otherwise we are just watching that person make but not acually learning ourselves. chi-chi i love you, i also made your red stew GO GIRL, im 100% american and my bf is from accra ghana and he loved it.

This looks very yummy... I am making my first ever joloff rice while i watch this. African food is amazing, yet still largely unknown in the west. It's bound to be the next big thing!

I am going to try this recipe tonight. Seems interested and I'm always open to trying food from other countries. This Chi Chi was very clear in her instructions and I enjoyed watching her cook and the dish looks tasty.

I'm Nigerian, but I was born here, I like the way you cook your rice its different to how my mum does it, but I wouldn't say its the wrong way of doing it, its just another way :) I'm trying to learn how to cook more african food and this is realyy helpful, keep doing what you're doin :)

I'm African as well and i never used mixed vegetables in my Spaghetti but now i do, it adds color and helps make it a lil healthier. You also have to understand that those who live abroad don't generally have many healthy choices and the lifestyle is different so you make do with what you've got.

I haven't seen you post new material in awhile, Chi Chi and I miss it. You have made West African cooking accessible to folks like me, ahem, further west. As an American I can see easily how Jollof Rice became the American Jambalaya. I appreciate your work and hope to see more. This has been a rather 'interesting' year for a lot of us in terms of intensity. Hope you see you back.

Nigerian food is really good. I went to a restaurant with my Nigerian friend the other day, we tried a bunch of food like pounded yam, tripe of cows, puff puff, jollof rice, ect.

My family sponsored a family from Africa that was moving to the US, and they lived with us for a while. She would make us jollof rice with chicken sometimes.. It was my favorite.. I loved the smell of it. It's what got me in to spicy foods. She wrote down a recipe for it for me.. It's not quite the same as how you made it here, and i've been unable to perfect it, yet.. but i sure wish i could.

Love love loving it. I was advised not to use garlic n all that fancy stuff when making jollof rice,but i see u used it. this is my new recipe! hurray.

Hi chi chi, Great video. I am african american and I was introduced to jollof rice by a liberian. I was later retroduced to it by a camoronian and then ghanian. I am eager to try the nigerian version. All in all it is the same, and I like the claims who really prepare the best jollof rice. I am eager to try the senegalese version i must say. I love the video and continue your good work.

@Gluluman so you visited the continent several times,well done. I live there. Senegalese, Gambia and others nationalities come to trade and work in Nigeria. My friends and family employ people from Cameroon, Senegal, Ghana and yes they are great to have around. They are happy to introduce us to dishes from their culture as well as learn from ours.

Great recipe. I was looking through the comments and it seems a lot of people think you cook Jollof wrong. I'm Igbo as well and when my mother as well as my cousins in nigeria make jollof they use veggies as well as ginger. The only difference is that they use chicken or beef stock with little pieces of chicken or meat in the rice as well. Also normally cut up the oinions smaller. But your recipe looks great.

EBONY: You're 100000000% correct! It did start there,and has become the most celebrated dish across the WHOLE of W/A, and rightfully so. Obviously from country to country slight changes have been made in terms of cooking styles and some spices, but we've got to give credit where it's due, and our Senegalese/Gambian kindred deserve that honour! If you had a cooking show on FoodNetwork TV, I'd watch it and try out your recipes -- I love variety of foods from different cultures, and yours looks delicious. PLUS, you do a great presentation.... (Cudos to your camera-person, does a great job too, btw).

When I make it I usually guage how much water I think and need then after I put the rice. Sometimes I mess up the measurement and it messes up my jollof rice. The amount of water you put in can make or break you. Now I am going to do it the way you add it. It is better that way to get the right amount. Love your tutorial.

Ooooooh! You are soooo lovely! I've just been to Nigeria and really really enjoed the food there! I also tried to make Egusi soup in RUSSIA! hahaha! Instead of egusi seeds I used sunflower seeds! I'd love to see more Naija recepies from u, my sister :-)

i'm american, my fiancee is from lagos...so i used this recipe one night for him and he ate nearly the whole pot by himself! said it tastes like his mum's :)

I think I would find heaven while being in your kitchen!! Those colours....those smells....To Die For!!.....But..about those peppers...you said the red ones were really hot! The Surinam pepper named 'Mme. Jeanet' is waaaaaaaaaaaay hotter and only edible for those who are used to it.....But I'm going to try your recipe and enjoy it!!! Thank you for posting!!!!

Great and delicious recipe. However, it is fair to say that this introduces folk to the world of AFRICAN food, not just Nigerian. Most West Africans divulge in the glory of jollof rice:) Thanks for sharing

Okayyy, I'm about to try this out....and I have to say I am really nervous. I don't have the cajun spice, I wish I had got it :( I do have curry so I will use it. I have not blended tomatoes in ages, but I am going to. You presentation has given me courage to try and make jellof rice.....past attempts at doing this before in my life failed. SO, I am going to do it again....I will let you know how it goes. Thank you so much for posting!

I love Jollof rice, but I usually add corned beef to the sauce mixture before I add the rice or chicken into the mixture, I guess I am doing the Igbo style. But I love your video!!!

hey heres a tip use chinese perfume rice or the basmati rice instead of the easy cook rice. cos u wont need to put water into it. the easy cook rice needs alot more water to make it soft.

For this recipe, yes you do, they are.tinned plum tomatoes, sold in most if not all supermarkets and convenience stores. Different types of tomatoes probably won't have the same result, would probably be like bolognase or con carne, the plum tomatoes makes it more fruity and fabulous.

They were frozen vegetables, you can buy them in packets. I have the same ones, they've got peas, carrots, some type of bean, and sweetcorn in them.

yeah thats how i make mine most times cos most times adding water to the sauce makes it soggy.but sometimes if one is careful it doesnt turn out soggy.
